怒江让云南这个地方多了一份神奇,怒江边上能种很多热带的水果,荔枝,芒果,香蕉,鸡蛋果等等。酷热的夏天,去采了些晶莹剔透的荔枝,做一些我家里人没有吃过的菜,水晶荔枝虾球、冰爽荔枝啤酒、荔枝脆皮烤鱼......这个新鲜的味觉体验,既解暑又满足~

Salween River adds a magical touch to Yunnan with multiple tropical fruits growing alongside the riverbank, such as lychees, mangoes, bananas and egg fruits (canistel) I picked some lychess during the hot summer and made dishes rare to my families. 百香果,我们当地叫西番莲,甜的直接吃,酸的加点白砂糖一起吃,长大后发现,原来百香果还可以拿来做菜,百香果有多种维生素和微量元素,果汁果皮都是宝,所以被称为「果汁之王」、「水果药王」,它有独特的酸味和果香,我们喜欢用它的果酸来调味,做蘸水,拌菜,煮鱼煮鸡都特别鲜美~

「一席一果」——晶莹剔透的桂圆【滇西小哥】

桂圆又叫龙眼,小时候特别爱吃,后来怕长胖,每次都只尝几颗……上大学时候在产桂圆的江边小城,那里盛产桂圆,常常吃些用桂圆做的美食,回來雲南幾年後,突然想念那的味道了,用云南的桂圆做几道菜吧。 云南也有种桂圆的地方,还是在那条怒江边上,夏天虽然在江边会更闷热一些,但吃了荔枝吃桂圆也挺幸福的!吃完这一季桂圆,夏天也彻底结束了~

Longan is also called dragon's eye. I used to love them when I was a kid. As its sweetness leads to easy weight gains, I had to eat less of them. My collage is in a riverside town with lots of longans. People there use longan to make various cuisines. It's been years since I've returned to Yunnan. The taste of longan came to my mind out of blue, so I decided to cook some dishes with Yunnan longan.
Yunnan does have longan trees. It's still along the Salween River. Though the riverside is muggy in summer, it does feel great to enjoy litchis first, then longan. After I enjoyed the longan, summer has officially gone.

来自云南大理独特的酸味和乳香:乳扇【滇西小哥】

你们对大理的印象是什么?对我来说,还是这份奶香浓郁的乳扇,至今都无法用机器代替!
“云南十八怪,牛奶做成片片卖”说的就是大理的乳扇!
用新鲜的牛奶和自然发酵的酸浆融合,鲜奶中所含的蛋白质(主要是酪蛋白)发生变性而凝固,牛奶逐渐生成絮状物,用木棒轻搅汇聚后用手辅助搅捏成乳团。
将生成的乳团取出后,先压圆成饼,接着用两木棒在手中搓压成大长饼,最后将湿滑之乳饼片的两端拉出角形,缠铺于竹制梯状晾架上,晒干后的乳扇有特别浓郁的奶香味,油炸还是炭烤都特别好吃!

What is your impression of Dali? For me, it is this intense milky scent from Rushan cheese, which cannot be produced by machines yet!
The old saying “18 Odds of Yunnan, milk in pieces for sale” refers to Rushan cheese from Dali!
It is made of fresh milk and its naturally fermented sour liquid. The proteins in milk (mostly casein) denatures and starts to form solid clumps. Use a wooden stick to mix gently and squeeze the mixture into a diary dough with hands.
Take the dairy dough out and press into round shapes. Then use two sticks and twist them into longer shapes. Pull triangles out of the edge of each end and twine the pieces around bamboo trapezoid drying shelves. Sun-dried Rushan cheese has an intense milky scent. It is so very tasty, either fried or grilled!

Our neighbor saved tripe for me when her family butchered their cows. I used to make hot pot with it, but I decided to do something else this time. Use white vinegar and baking soda to clean the tripe and blanch. Whether you use it for cold dishes or stir-fries, its taste is always crisp and juicy. 第一次听说这个名字的时候,我以为是用牛屎发酵来酿的酒,就特意请教做牛屎酒的龙哥,傣族自家烧的小锅米酒放置一年以上才能转入土罐子里,用盐霜树做木塞子,裹上牛皮纸,热蜂蜡封口,再敷上新鲜牛屎存储2年以上,才是正儿八经的牛屎酒。
爷爷是一个爱酒的人,对他来说,酒便是生活最好的调味品。第一次拍酒的视频,就是三年前的玉米酒,很快,已经过去三年了

The first time I heard the name, I thought the wine was made of bull dung. So I asked Brother Long who is good at making bull dung wine. He told me that the decent bull dung wine uses homemade rice wine which has been stored for over a year before taking it into a jar. The plugger should be made of a salty tree branch and wrapped in brown paper. The jar needs to be sealed with melted bee wax then cover the bottleneck with fresh bull dung to store for at least two year.
My grandpa enjoys drinking wine. To him, wine is the best seasoning of life. I made my first video about corn wine three years ago. How time flies! It’s been three years already.

又到了一年一次吃年猪饭的时候,腌上一坛水腌菜,拌一碗:“红生”,炒一碗酸猪血,还有那金黄的火烧皮加上酸木瓜醋和莴笋丝一拌,用大锅炒一盆蚕豆炒肉,猪肝炒蒜苗,借着骨头汤再熬一锅酸耙菜~
在外打拼的亲戚们陆续回来,吃了一年的外卖,在冬月里吃上一桌年猪饭,哇,是过年的味道啊!

寻找云南香格里拉高原上的舌尖美味——藏餐【滇西小哥】

说起藏餐, 怎么少得了牦牛肉,酥油茶和糌粑呢?和鲁茸告别后我们去了一趟香格里拉吉迪村的牧场,除了草甸牛羊,这里还有香气扑鼻的糌粑和香甜沁人的酥油茶。
村里的老人们3到9月都在牧场放牧,每天都挤牛奶做酥油,第一次看到酥油的制作过程,也尝到了最新鲜的酥油茶的味道,走之前和爷爷买了一饼酥油和一些牦牛肉,爷爷还送了我青稞粉,回家后做一顿正儿八经的藏餐~除了酥油茶和糌粑,我还做了藏式火锅和耗牛肉干,也很有味道呢!

Speaking of Tibetan dishes, how can we forget yak meat, butter tea and tsampas? After saying goodbye to Lu, we went to the Jidi Village Pasture of Shangri-La. Besides yaks and goats, this place is also famous for its fragrance tsampa and delicious butter tea.
Between March to September, the elders usually herd the cattle in the pasture. They will collect milk and make butter daily. It's my first time seeing how the butter is made. I also had a try at the freshest butter tea. I bought a butter cake and some yak before leaving. The old man also gave me some hulless barley powder as a gift. I made some real Tibetan dishes at home. Besides butter tea and tsampa, I also made a Tibetan yak hot pot and some dried yak meat. It's very delicious.

Some ethnic minorities in Yunnan will ferment meat to make sour meat. Some will wrap meat with musa bajoo leaves and some will ferment the meat with sticky rice and spices. But they both use a small amount of salt and let the meat ferment in the unique natural environment of Yunnan. The meat will take on a slightly sour flavor and is very yummy yet not greasy.

酸酸甜甜,原汁原味——菠萝饭【滇西小哥】

前两天到菠萝村背了一筐菠萝回来,
用菠萝和紫糯米蒸了几个原味的菠萝饭,煮了一锅冰糖菠萝,冷冻后叫“冰菠萝”,夏天喝真的特别爽!趁天气好又晒了些菠萝干,就当下周小豪带去学校的零食了~

羊奶果——想到名字就酸到流口水的水果【滇西小哥】

小时候没有什么零食,屋后院子里的羊奶果树就是这个季节所有零食的源头,拌着白糖配蘸水辣吃,泡糖水吃,熬成羊奶果膏晒干了吃……
后来人虽然长大了,但是一到果子成熟的季节,还是会摘些回来做了吃!
