For the majority of people, papaya is a fruit commonly seen in a fruit store, which will be enjoyed as a fruit only once it's ripe. Yet for us, papayas are edible as long as its shape is formed. The texture of its flesh determines its ripeness. You can use raw papaya to make a cold dish, or use ripe papaya to stew some soup. Either way, the taste is great.

「一席一果」——晶莹剔透的桂圆【滇西小哥】

桂圆又叫龙眼,小时候特别爱吃,后来怕长胖,每次都只尝几颗……上大学时候在产桂圆的江边小城,那里盛产桂圆,常常吃些用桂圆做的美食,回來雲南幾年後,突然想念那的味道了,用云南的桂圆做几道菜吧。 云南也有种桂圆的地方,还是在那条怒江边上,夏天虽然在江边会更闷热一些,但吃了荔枝吃桂圆也挺幸福的!吃完这一季桂圆,夏天也彻底结束了~

Longan is also called dragon's eye. I used to love them when I was a kid. As its sweetness leads to easy weight gains, I had to eat less of them. My collage is in a riverside town with lots of longans. People there use longan to make various cuisines. It's been years since I've returned to Yunnan. The taste of longan came to my mind out of blue, so I decided to cook some dishes with Yunnan longan.
Yunnan does have longan trees. It's still along the Salween River. Though the riverside is muggy in summer, it does feel great to enjoy litchis first, then longan. After I enjoyed the longan, summer has officially gone.

怒江让云南这个地方多了一份神奇,怒江边上能种很多热带的水果,荔枝,芒果,香蕉,鸡蛋果等等。酷热的夏天,去采了些晶莹剔透的荔枝,做一些我家里人没有吃过的菜,水晶荔枝虾球、冰爽荔枝啤酒、荔枝脆皮烤鱼......这个新鲜的味觉体验,既解暑又满足~

Salween River adds a magical touch to Yunnan with multiple tropical fruits growing alongside the riverbank, such as lychees, mangoes, bananas and egg fruits (canistel) I picked some lychess during the hot summer and made dishes rare to my families. I made shrimp balls with crystal lLychees, refreshing lychee beer and roast fish with lychees. The novel taste of lychee dishes drives the hotness away and is very satisfying.

百香果,我们当地叫西番莲,甜的直接吃,酸的加点白砂糖一起吃,长大后发现,原来百香果还可以拿来做菜,百香果有多种维生素和微量元素,果汁果皮都是宝,所以被称为「果汁之王」、「水果药王」,它有独特的酸味和果香,我们喜欢用它的果酸来调味,做蘸水,拌菜,煮鱼煮鸡都特别鲜美~

「一席一果」酸角——云南酸味最独特、水份最少的水果【滇西小哥】

离村子不远的怒江边上有一大片酸角林,是那种酸味浓个头扎实的老品种酸角,树上叶子都掉光了,但树上还满是一串串的酸角。我靠着身体重力摇了一背篓回来,做了奶奶爱吃的酸角糕,小豪爱吃的酸角糖,还有爷爷的酸角泡酒,还有一罐酸角醋,是真够吃一年了。这个醋怎么做都好吃,天气热了,我就拌了个胡辣椒鸡脚,真的出奇的好吃~

There's a forest of tamarind trees along Salween River not far from our village. They bear very sour and big fruits. Though the leaves all fell down, there are lots of tamarind fruits on the tree. I shook some fruits down and gathered a full basket of them. I made some tamarind fruit cakes for grandma, tamarind fruit candies for Ahao, tamarind fruit wine for grandpa and a jar of tamarind fruit vinegar that can last for a whole year. The vinegar can be eaten in many ways. Since it's getting hot these days, I made some spicy chicken feet with the vinegar, which is really tasty.

你们见过长了几百年的芒果树嘛?这个季节的云南,空气中都能闻到芒果味,特别香甜~有几百年的芒果树长的老品种芒果,也有鹰嘴芒、小澳芒~我们吃芒果,从生的吃到熟的,凉拌生芒果沙拉,芒果糯米饭,还能做成芒果干储存一整年,不管怎么吃,都让嘴巴停不下来!

Have you ever seen mango trees that are hundreds of years old? The air is filled with the sweet mango fragrance during this time of the year. Lotus roots usually harvest in August. However in Yunnan, the first lotus roots can be harvested already. They are crispy and sweet. So I made several local dishes with them. Thanks to the great natural environment of Yunnan, you can taste the summer sunshine even in the lotus roots.

云南冬天虽然也有温暖如春的太阳,但是山里没有菌子,去和种菌子的叔叔要了几个菌包来,悉心照料几天就长出了可爱的菌子,格外鲜甜肥美,清炒,炖汤,油炸统统吃一遍!
云南人吃菌子的喜爱是无可替代的,不管是山上长的还是地里种的,都能变着花样的吃,而且总吃不腻~

In winter, though the sun shines just like that in the spring, there's no fungus in the mountains. I asked for some fungus bags from a fungus farmer. After a few days, there grows some lovely fungi. These fungi are very sweet and tender. So I stir-fried, stewed and deep-fried them one by one.
Nothing beats Yunnan people's love for fungus. No matter they are found in mountains or harvested from fields, we are never tired of eating them in various ways.

海拔3500米上的「菌中之王」——松茸【滇西小哥】

这个季节里,最珍贵鲜美的就是被誉为“菌中之王”的松茸了,生长在海拔3000米的温带,一般需要5-6年的生长周期。
7月份的时候去了一趟香格里拉,和我的藏族朋友一起走了3个小时的山路,找了接近4个小时,最后只找到了6朵松茸 ,采起来真的有点费时间…… 回去做了一桌菜,松茸刺身、烤松茸、松茸炖乌鸡、云腿山珍酱,配合米饭,面条和饵块一起吃,这一顿的鲜美也值得~

During this time of the year, one of the most precious delicacies is the king of mushrooms - matsutake. It grows in temperate areas 3000 meters above sea level and takes about 5 to 6 years to harvest. I visited Shangri-La back in July. Together with my Tibetan friend, we walked 3 hours into the mountain and searched for almost 4 hours, only to find 6 matsutake. It really is time consuming. Then I cooked some dishes: matsutake sashimi, grilled matsutake, stewed silkie with matsutake and ham and mushroom sauce. We eat them with rice, noodles and bait blocks. What a nice meal!

它个头不大,对环境的要求特别高,要生活在没有污染的泥浆水里,味道却特别鲜美,油炸后可以直接吃,也可以做成景颇菜:“舂螃蟹”。就着美味的舂螃蟹,我还做了一份:“傣味菜包鱼”,每一口都鲜美难忘~

Have you ever tried crabs living in the mountains? In the streams deep inside Yunnan mountains, there are some purple crabs called Mountain Crabs.
These crabs are small and have a strict requirement for their habitats. They can only live in non-polluted muddy water. Nevertheless, they have an amazing taste and can be eaten once deep-fried or made into a Jingpo dish - Pounded Crabs. I also made some Dai-style stuffed leaves with fish with these pounded crabs. Every bite is a treat for the taste buds.

Many of you may not be aware that Yunnan is the main production area of small coffee beans. Thanks to the hot and dry valley climate, the coffee beans have a balanced taste with low acid levels, mild bitterness, intense fruity aroma and a fuller-body. Yunnan coffee is warmly welcomed in the market. I picked a basket of coffee beans along Lujiang River and tried roasting my own coffee beans at home. In this quiet afternoon, let's enjoy a cup of hot coffee.

绝大多数人知道攀枝花,是因为它是四川的一个城市。其实,它还是一种好看的植物。常见的攀枝花是红色的,少数是淡红色,前两年第一次见到黄色的攀枝花。这次一起摘了不同颜色的花,做上一桌攀枝花的美味。
我们当地会做各种各样的“帽子”,这次特意制作了猪肉酱帽子,每次煮面煮米线时放上一勺,别提有多开心了。
家里把猪圈和牛圈拆了重新改造一下,之后也会在每期视频里有一些改造的进度,希望最后出来的样子,你们也喜欢!

For most people, bombax flower is the name of a city in Sichuan province. However, it is also a plant with pretty flowers. The majority bombax flowers are red, with some light red ones. I also found some yellow flowers two years ago. So I picked bombax flowers of different colors and made some dishes with them.
Here in Yunnan, we are good at making various “caps”. I made some pork cap (sauce) this time. It goes perfectly with rice noodles.
