「一席一果」柚子——入秋后的一口甘甜【滇西小哥】

我可太聪明了,用别人家的柿子换别人家的柚子。一入秋,柚子就成熟了,路过柚子树,都能闻到空气里清甜的香气,柚子耐储存,从入秋到腊月,都是家里常备的水果。这次用柚子来做几道小食,柚子酱油和柚子炒饭你们一定要试!

I'm so smart! I traded some pomelos with persimmons picked from other's trees. Pomelos are ripe in early autumn. One can smell the refreshing fragrance by just passing by the pomelo trees. Pomelos can be preserved for a long time. As a result, it's a common fruit available from early autumn to Spring Festival. I made some snacks with pomelos this time. Do try the pomelo soybean sauce and stir-fried rice with pomelos.

「一席一果」柠檬——水果入菜的鼻祖,一口酸爽的味蕾刺激【滇西小哥】

离家不远处有一片柠檬果园,老板说今年收成不好,也没请人采摘,一部分成熟掉落在地上,一部分挂在树上就烂了……我去摘了一箩筐回来,皮薄肉厚,清香浓郁,虽说柠檬是水果,在云南却是我们常备的酸味调料,就着这筐柠檬,把爱吃的都统统做一遍~

There's a lemon orchard near my home. The owner said it's not a harvest year so they didn't ask workers to help pick the fruits. Some lemons got ripe and dropped onto the ground and some began to rot while still hanging on the trees. I went to pick a basket of lemons. They have very thin peels and full juicy flesh with refreshing fragrance. Though lemons are fruits, we usually use them as a sour spice here in Yunnan. I made all my favorite dishes with the basket of lemons.

「一席一果」椰子——外堅內柔的清涼甘甜【滇西小哥】

作为云南人来说,摘椰子是个多新鲜的事呀,这是我第一次爬到这么高的树上,第一次摘椰子。9月版纳的街头巷尾,都能买到10块钱一个的大椰子,云南菜里用到椰子的,也就是泡鲁达了,而且还是一个舶来品。不过当地人也会做一些椰子的美食招待外地客人。爷爷奶奶是第一次喝椰子、第一次吃新鲜椰子做的菜,我也觉得新鲜,椰子椰壳能做的都统统做了一遍~

For Yunnan people, it's a novel experience to pick coconuts. This is my first time to climb onto such a tall tree and pick coconuts. In September, you can find big coconuts sold in many places here in Xishuangbanna. They are usually sold at the price of 10 yuan. When speaking of Yunnan cuisines, we only use coconuts when making Paoluda. But the dish is still not native to the place. We locals can also make some coconut dishes to treat others. It's my grandparents' first time to drink coconut juice and enjoy dishes made with fresh coconuts. I also find it very interesting so I made all the dishes I know with not only coconut flesh but shell.

「一席一果」牛油果——浓郁醇厚的丝滑果香【滇西小哥】

在第一波寒风来临之前,摘了些充满热带风味的水果,释迦果、黄晶果的甜度很高,直接吃简直可以甜到心坎里。牛油果还是适合入菜,我钟爱牛油果,据说爱吃肉的人都会喜欢牛油果……家里人没吃过,这次也计划着做点什么让他们尝尝……成熟的牛油果做成酱,细腻湿润的蘸料配上炙烤10小时的牛腿,这味道谁不爱呢~

Before the first wave of cold wind arrives, I picked some tropical fruits. The sugar apples and abius are so sweet that they're just like candies. Avocado is also a good cooking ingredient. I love avocados. It's said that meat lovers all like avocados. But my family never tried them, so I planned to make some dishes for them. 「一席一果」车厘子——高挂树梢上的红宝石【滇西小哥】

六七月,云贵高原的车厘子迎来出果期,其实不管是毛樱桃还是车厘子,我们没有那么多称谓上的苦恼。这次在阿姐家的果园摘一箩果子,做了一些甜品,樱桃果巧克力,红丝绒蛋糕,招待远嫁回来的表姐和娃儿们太合适不过了~

June and July is the harvest season of cherries in Yunnan. It doesn't bother us whether it's called cerasus tomentosa or prunus avium. I picked a basket of cherries in the orchard and made some desserts such as chocolate cherries and red velvet cake. They're just perfect to treat my cousin who's married to a faraway city and the kids.

你们见过长了几百年的芒果树嘛?这个季节的云南,空气中都能闻到芒果味,特别香甜~有几百年的芒果树长的老品种芒果,也有鹰嘴芒、小澳芒~我们吃芒果,从生的吃到熟的,凉拌生芒果沙拉,芒果糯米饭,还能做成芒果干储存一整年,不管怎么吃,都让嘴巴停不下来!

Have you ever seen mango trees that are hundreds of years old? The air is filled with the sweet mango fragrance during this time of the year. Here in Yunnan, you can find mangoes of different varieties, such as the mangoes from trees that are hundreds of years old, king mangoes and small Australia mangoes. People here eat both raw and ripe mangoes. They can be made into cold dishes and salads. Or you can also pair mangoes with glutinous rice, or make dried mango slices that can be preserved for a whole year. However mangoes are cooked, no one can resist such a delicacy.

怒江让云南这个地方多了一份神奇,怒江边上能种很多热带的水果,荔枝,芒果,香蕉,鸡蛋果等等。酷热的夏天,去采了些晶莹剔透的荔枝,做一些我家里人没有吃过的菜,水晶荔枝虾球、冰爽荔枝啤酒、荔枝脆皮烤鱼......这个新鲜的味觉体验,既解暑又满足~

Salween River adds a magical touch to Yunnan with multiple tropical fruits growing alongside the riverbank, such as lychees, mangoes, bananas and egg fruits (canistel) I picked some lychess during the hot summer and made dishes rare to my families. I made shrimp balls with crystal lLychees, refreshing lychee beer and roast fish with lychees. The novel taste of lychee dishes drives the hotness away and is very satisfying.

百香果,我们当地叫西番莲,甜的直接吃,酸的加点白砂糖一起吃,长大后发现,原来百香果还可以拿来做菜,百香果有多种维生素和微量元素,果汁果皮都是宝,所以被称为「果汁之王」、「水果药王」,它有独特的酸味和果香,我们喜欢用它的果酸来调味,做蘸水,拌菜,煮鱼煮鸡都特别鲜美~

厚着脸和邻居家要了一些废弃的菜坛子,一锤子下去敲成啥样就用啥样,种上花草,一样很好看。今年夏天的最后一季桃子,终于在果林里吃够了……熟透的蜜桃,香甜软糯,特别喜欢。也带了些回来,做些夏日小食~

TI got some unwanted jars from neighbors. I randomly hammered the jars and they look pretty with flowers planted. Now that the last peaches are ripe, I finally had enough in the orchard. Ripe peaches are very sweet and tender, which are my favorite. I also brought many peaches back and made some summer dishes.

For the majority of people, papaya is a fruit commonly seen in a fruit store, which will be enjoyed as a fruit only once it's ripe. Yet for us, papayas are edible as long as its shape is formed. The texture of its flesh determines its ripeness. You can use raw papaya to make a cold dish, or use ripe papaya to stew some soup. Either way, the taste is great.

离村子不远的怒江边上有一大片酸角林,是那种酸味浓个头扎实的老品种酸角,树上叶子都掉光了,但树上还满是一串串的酸角。我靠着身体重力摇了一背篓回来,做了奶奶爱吃的酸角糕,小豪爱吃的酸角糖,还有爷爷的酸角泡酒,还有一罐酸角醋,是真够吃一年了。这个醋怎么做都好吃,天气热了,我就拌了个胡辣椒鸡脚,真的出奇的好吃~

There's a forest of tamarind trees along Salween River not far from our village. They bear very sour and big fruits. Though the leaves all fell down, there are lots of tamarind fruits on the tree. I shook some fruits down and gathered a full basket of them. I made some tamarind fruit cakes for grandma, tamarind fruit candies for Ahao, tamarind fruit wine for grandpa and a jar of tamarind fruit vinegar that can last for a whole year. The vinegar can be eaten in many ways. Since it's getting hot these days, I made some spicy chicken feet with the vinegar, which is really tasty.

「一席一果」——晶莹剔透的桂圆【滇西小哥】

桂圆又叫龙眼,小时候特别爱吃,后来怕长胖,每次都只尝几颗……上大学时候在产桂圆的江边小城,那里盛产桂圆,常常吃些用桂圆做的美食,回來雲南幾年後,突然想念那的味道了,用云南的桂圆做几道菜吧。 云南也有种桂圆的地方,还是在那条怒江边上,夏天虽然在江边会更闷热一些,但吃了荔枝吃桂圆也挺幸福的!吃完这一季桂圆,夏天也彻底结束了~

Longan is also called dragon's eye. I used to love them when I was a kid. As its sweetness leads to easy weight gains, I had to eat less of them. My collage is in a riverside town with lots of longans. People there use longan to make various cuisines. It's been years since I've returned to Yunnan. The taste of longan came to my mind out of blue, so I decided to cook some dishes with Yunnan longan.
Yunnan does have longan trees. It's still along the Salween River. Though the riverside is muggy in summer, it does feel great to enjoy litchis first, then longan. After I enjoyed the longan, summer has officially gone.

老树核桃——沉淀百年的果仁香气【滇西小哥】

你们知道200年老树结的核桃有多香吗?9月打回来的老树核桃,剥了4个多小时的壳,烤一盘蜂蜜核桃仁,再熬一锅纯正核桃油,油香四溢,这就是核桃树沉淀百年的味道~
踩着秋天的尾巴,用核桃油煎一份仪式感满满的牛排,做一锅铁板烧,既温暖又美味!

Do you know how good the taste of walnuts from a 200-year-old tree is? I collected some walnuts back in September and spent four hours cracking them open. I made some roasted walnuts with honey and pure walnut oil. How good the fragrant is. It is truly the gift from time.
In this late autumn, let's fry the steak with walnut oil and made teppanyaki. It brings not only warmth, but also good appetite.

要说来云南必吃的美食,那一定是手抓饭了,就着上次染的五彩米,加上外婆家给的食材回来,正儿八经做一桌手抓饭!烤的,炸的,拌的,煮的,舂的,辣的酸的都能集合在一个簸箕里吃,所有你想吃的菜也都能加在里面,菜和饭粘在一起,用手抓着吃,太香了~再喝上一口甜白酒水~哇,减什么肥,吃完这顿再说~

Speaking of must-try dishes in Yunnan, no one could forget about hand pilaf. I made a pretty hearty hand pilaf with 5-colored glutinous rice and some of the ingredients from grandma's. Whether it's roasted, fried, cold dish, brewed or pounded, sour or spicy, everything can be mixed up in one big plate, with any vegetables you prefer as well. Use your hands to mix rice with all the side dishes and it's just amazing. Don't forget to accompany it with some sweet rice wine. What's the use of losing weight anyway? Let me finish the hand pilaf first.

紫苏——双色树叶里藏着的清新美味【滇西小哥】

夏天的口味有点挑剔,总想吃一些特别的味道,半年前买回家的紫苏已经快长老了,腌一个紫苏木瓜,去荷塘里抓点小龙虾,炒个紫苏,做个酱,煲个茄子,拌脆藕,炸个完整荷花,最后再有一杯紫苏桃子快乐水,快活似神仙……久违了,我们的四季调料!

We're picky in the hot summer and are always looking for some special foods. The shiso I bought half a year ago has almost matured. I made a marinaded papaya with shio and caught crawfish in the lotus ponds. I also stir-fry the shiso to make shiso sauce, claypot eggplants, crunchy lotus roots cold dish and deep-fried lotus flowers. I also made a cup of shiso and peach soda to enhance the enjoyment. 村里家家户户都会在房前屋后种一些常吃的蔬菜佐料,常用的葱姜蒜苗必不可少,撇菜根、薄荷、老缅香菜也不例外……我们家爱吃撇菜根,是随了奶奶的习惯,她喜欢啥菜都要加点,生撇菜根有蒜和辣椒的味道,煮熟的撇菜根软糯中带有淡淡的清甜。这属于大家最不熟悉的云南佐料之一了……加上一个月前腌制的撇菜鲊,秋冬里吃起来味道正好~

We usually plant some common vegetables and spices around our houses. Besides the commonly seen shallots, gingers and garlic, we also plant wild chive roots, mints and Burmese cilantro. We all enjoy wild chive roots as it's passed down from grandma. She prefers to eat almost every dish with some wild chives. Raw wild chives taste like garlic and chilies, while cooked wild chives are soft and slightly sweet. It is one of the least common Yunnan spices. I also marinaded some wild chives a month ago. Now it's just the right time to enjoy them as well.

芋荷花——生时麻口,熟时软糯的夏末粉红【滇西小哥】

芋头的花在云南也是一种独特的食材,生的会麻口,汁水粘在任何地方会地方都洗不干净,一定要撕去外壳和花蕊高温加工到软烂,才能端上餐桌,它特殊的香味和软糯的口感也总让人念念不忘,所以也成了夏末秋初我们家餐桌上的常驻“嘉宾”。

The flower of taro is also a unique ingredient here in Yunnan. The raw flower will make one's mouth numb and its juice leaves a stain mark that can never be cleaned. It needs to be peeled and its stamen also needs to be removed. Cook these taro flowers with high heat until they're soft and tender. Only in this way can they be served. Their unique fragrance and tender taste make us remember all the time. As a result, they’ve regularly been seen on our tables during late summer and early autumn.
