一道“名不副实”的腌辣菜——猪肝鮓【滇西小哥】

祖辈留下来的排骨储存方法中,除了做腊排骨,骨头鮓,还有一种猪肝鮓。同样的调料,光有排骨就叫“骨头鮓”,是我们施甸的特色腌辣,如果加上猪肚和肥肠,就成了大理的“猪肝鮓”, 这道菜全程没有用到猪肝,但是祖辈们都叫它猪肝鮓,口味和吃法都类似,可蒸,可炒,可烩……当成一种特色调味料~每年杀年猪都会做一些储存。

又到了杀年猪做过年菜的時候了,吹豬肝、卷蹄、香肠,你们吃过吗?【滇西小哥】

有多少人是从两年前的那期吹肝认识我的呢?今年我们又做吹肝了
今年的年猪急急忙忙的就宰了,一家人忙到了晚上,不过该做的过年菜都做了,腌制了火腿,排骨,装了香肠,吹肝,还特意做了卷蹄。在我们所有的过年菜里,卷蹄是工艺最复杂的了,需要完整的剥下猪蹄的皮,塞上猪瘦肉,不能有一点空隙,再认真缝合上,稻草绑紧后煮熟腌制数月,口感特别Q弹,也有淡淡酸鲊肉的味道~

How many of you have known me since the cured blown pig liver episode two years ago? We made that dish again this year.
This year, we butchered the annual pig in a hurry. My family and I worked till late night and managed to prepare all dishes for the lunar new year. We made not only hams, ribs, sausages, cured blown pig liver, but also stuffed trotters. Among all annual pig feast dishes, stuffed trotters require the most efforts. We will have to peel the skin of a trotter integrally to stuff lean meat inside, leaving no gaps at all. Then stitch the skin and tie with straw tightly to boil until cooked. Marinade the trotter for months and it will become chewy and spongy, which tastes like sour meat.

寻找云南香格里拉高原上的舌尖美味——藏餐【滇西小哥】

说起藏餐, 怎么少得了牦牛肉,酥油茶和糌粑呢?和鲁茸告别后我们去了一趟香格里拉吉迪村的牧场,除了草甸牛羊,这里还有香气扑鼻的糌粑和香甜沁人的酥油茶。
村里的老人们3到9月都在牧场放牧,每天都挤牛奶做酥油,第一次看到酥油的制作过程,也尝到了最新鲜的酥油茶的味道,走之前和爷爷买了一饼酥油和一些牦牛肉,爷爷还送了我青稞粉,回家后做一顿正儿八经的藏餐~除了酥油茶和糌粑,我还做了藏式火锅和耗牛肉干,也很有味道呢!

Speaking of Tibetan dishes, how can we forget yak meat, butter tea and tsampas? After saying goodbye to Lu, we went to the Jidi Village Pasture of Shangri-La. Besides yaks and goats, this place is also famous for its fragrance tsampa and delicious butter tea.
Between March to September, the elders usually herd the cattle in the pasture. They will collect milk and make butter daily. It's my first time seeing how the butter is made. I also had a try at the freshest butter tea. I bought a butter cake and some yak before leaving. The old man also gave me some hulless barley powder as a gift. I made some real Tibetan dishes at home. Besides butter tea and tsampa, I also made a Tibetan yak hot pot and some dried yak meat. It's very delicious.

独一无二的藏族美味——尼西黑陶土鸡【滇西小哥】

尼西是香格里拉县的一个藏族乡村,是旧时茶马古道的必经之路,在这里有着2千多年的制陶历史,因为特殊的烧制工艺,做出来的陶是黑色,大家也都称这个地方烧制的陶为:尼西黑陶。
尼西除了黑陶还有尼西土鸡,长两年不过就2斤不到,用尼西黑陶来煮尼西鸡,又叫“藏全鸡”,“黑陶煮鸡”,味道特别鲜美,这吃过就让人念念不忘的味道,来香格里拉旅游都应该要尝尝~

Nixi is a Tibetan village in Shangri-La, and was a part of the the Ancient Tea Horse Road. It has more than 2,000-year's history of potting. Due to its special way of firing, the pottery turns out black. As a result, people call them Nixi black pottery.
Apart from black pottery, Nixi is also home to Nixi chicken. These chicken is no heavier than 1 kg after being raised for 2 years. Once cooked in Nixi black pottery, the chicken tastes extremely good. Do have a try when you visit Shangri-La.

施甸臭豆豉——冬日稻草窝里捂出的美味【滇西小哥】

进入11月,村里就开始捂臭豆豉了,煮软的黄豆经过三天四夜的发酵,捂出浓郁的臭味,也有细细的拉丝……吃起来特别香~
可以加调料舂成豆酱,也可以泡施甸特有的水豆豉,或者做成麻辣下饭的油豆豉也行。
可以搭配一切美食,荤的素的加上臭豆豉都能变成另外一种美味!

Villagers started to make stinky fermented soy bean sauce in November. Usually, we would ferment boiled soybeans for three days and four nights. It will then give out an intense stinky smell and turn stretchy, which is very tasty.
They can then be seasoned and pounded to make soy bean paste, soaked to become the special Shidian fermented soy bean sauce or mixed with oil to become the spicy and appetizing oily fermented soy bean sauce.
The stinky fermented soybean sauce goes well with almost every ingredient, leveling up the texture and taste of both vegetables and meat.

How did you celebrate Mid-Autumn Day? We went to the market in the day and bought some candies and fruits for the festival. I also visited granny's and brought some snacks. This is call Holiday Visit. As a present in return, granny also picked some fruits and vegetables for me to bring home.
At night, after worshiping the moon, we got together and enjoyed the mooncakes. We chatted and danced to the music. Here in Yunnan, people would dance to music together during the festivals. 고구려가 중국의 역사다, 바로 동북공정을 떠올리시는 분들 많으실 텐데요.

'김치공정'에 1,400만 명의 구독자를 보유한 중국의 한 유튜버까지 가세했습니다.

해당 영상에는 김치를 소개하며 '전통중국요리', '중국음식'이라는 해시태그를 달았는데요.

댓글에는 김치는 한국의 전통 음식이라며, 비난하는 댓글이 이어졌습니다.

해당 영상은 오늘 오전까지 조회 수 4백만을 넘어섰고, 21만 명이 '좋아요'를 눌렀습니다.

이에 맞서 김치를 지켜야 할 우리 정부의 대응도 도마에 오른다면서요?

【 기자 】
중국에서 한국 김치는 '파오차이'로 불립니다.

파오차이는 중국 쓰촨성 채소 절임을 일컫기도 하는데요.

즉, 김치가 파오차이로 불리며 마치 중국 음식인 것처럼 오해를 불러일으킬 수 있다는 것이죠.

그런데, 문화체육관광부 역시 파오차이로 김치를 표기하고 있었습니다.

중국이 김치를 파오차이로 소개하면서 자국 음식임을 주장하고 있는 상황에서 문체부 훈령 내용이 부적절하다는 지적이 나온 건데요.

이에 대해 문체부는 국민 정서를 고려해 훈령을 정비해나갈 계획이라고 진화에 나섰습니다.

전문가들은 김치뿐만 아니라 중국에선 한복·판소리 등 '문화 도발'이 계속되고 있다며 우려 섞인 목소리를 제기했습니다.

- 이런 상황에서 우리는 (중국이) 잘못된 주장을 한다고 비난만 할 것이 아니라 무엇이 잘못됐는지 정확하게 짚어주고, 올바르게 바로잡을 수 있도록 이제는 대안을 제시할 수 있는 상황을 만드는 것이 중요하다고 봅니다.

우리나라의 김치 수출이 역대 최고치를 기록했다고 하는데, 중국의 문화 도발에 김치의 명성이 꺾이지는 않을까 우려스럽습니다.
정부의 강단 있는 대책도 필요해 보입니다.
