Many of you may not be aware that Yunnan is the main production area of small coffee beans. Thanks to the hot and dry valley climate, the coffee beans have a balanced taste with low acid levels, mild bitterness, intense fruity aroma and a fuller-body. Yunnan coffee is warmly welcomed in the market. I picked a basket of coffee beans along Lujiang River and tried roasting my own coffee beans at home. In this quiet afternoon, let's enjoy a cup of hot coffee.

云南冬天虽然也有温暖如春的太阳,但是山里没有菌子,去和种菌子的叔叔要了几个菌包来,悉心照料几天就长出了可爱的菌子,格外鲜甜肥美,清炒,炖汤,油炸统统吃一遍!
云南人吃菌子的喜爱是无可替代的,不管是山上长的还是地里种的,都能变着花样的吃,而且总吃不腻~

In winter, though the sun shines just like that in the spring, there's no fungus in the mountains. I asked for some fungus bags from a fungus farmer. After a few days, there grows some lovely fungi. These fungi are very sweet and tender. So I stir-fried, stewed and deep-fried them one by one.
Nothing beats Yunnan people's love for fungus. No matter they are found in mountains or harvested from fields, we are never tired of eating them in various ways.

Located on the hillside, our village is over 20 km from town and home to more than 130 families. During the years, they offered much help to my videos as well as many surprises and great warmth. Today I recorded the best moments of 2020 for them. Hope all of us will have a great new year in 2021.

施甸臭豆豉——冬日稻草窝里捂出的美味【滇西小哥】

进入11月,村里就开始捂臭豆豉了,煮软的黄豆经过三天四夜的发酵,捂出浓郁的臭味,也有细细的拉丝……吃起来特别香~
可以加调料舂成豆酱,也可以泡施甸特有的水豆豉,或者做成麻辣下饭的油豆豉也行。
可以搭配一切美食,荤的素的加上臭豆豉都能变成另外一种美味!

Villagers started to make stinky fermented soy bean sauce in November. Usually, we would ferment boiled soybeans for three days and four nights. It will then give out an intense stinky smell and turn stretchy, which is very tasty.
They can then be seasoned and pounded to make soy bean paste, soaked to become the special Shidian fermented soy bean sauce or mixed with oil to become the spicy and appetizing oily fermented soy bean sauce.
The stinky fermented soybean sauce goes well with almost every ingredient, leveling up the texture and taste of both vegetables and meat.

牛皮作为食材,如果一定要挑点毛病出来,那就是太难处理了。需要旺火反复烧2小时,再多次浸泡清洗。完全处理干净的牛皮,用来炸、煮、卤、皮冻、凉拌都可,猪皮可以怎么吃牛皮就能怎么吃!口感比猪皮更丰富软糯,一张黄牛皮吃下去,感觉整个人都是满满的胶原蛋白~

Salween River adds a magical touch to Yunnan with multiple tropical fruits growing alongside the riverbank, such as lychees, mangoes, bananas and egg fruits (canistel) I picked some lychess during the hot summer and made dishes rare to my families. I made shrimp balls with crystal lLychees, refreshing lychee beer and roast fish with lychees. The novel taste of lychee dishes drives the hotness away and is very satisfying.

雨季的云南,就是七彩斑斓的样子,连菌子都是彩色的。雨过天晴的清晨,那肯定是上山采菌子了,颜色艳丽,味道鲜美,这次上山采摘了几十种不同口感的菌子,一锅炖!鲜甜爽口,喝上一晚杂菌火锅,哇,幸福的味道~
(地域差异,可食用菌类各有不同,大部分没熟的野生菌都可能会有毒哦,记得不要生吃!请勿食用不认识的菌类!)

小锅米线——云南街头巷尾的地道美味【滇西小哥】

云南人是离不开米线的,最地道的小锅米线那就必须用傣族的酸浆米线 ,将当年的新米经过发酵,磨浆,澄滤,煮浆,舂浆等十几道工序做成,时间周期长,味道也很独特,这也是在云南,米线最常见和受欢迎的吃法。
高汤在小铜锅里煮开,加上酱帽子和爱吃的蔬菜,还有酸腌菜和辣椒油提味,百吃不厌,走,甩米线去了~

Yunnan people cannot live without rice noodles. The best small-pot rice noodles use dai's sour liquid rice noodles. Ferment the new rice of the season to grind, settle and filter, boil and pound to make the sour liquid rice noodles. It takes a long time to make, but has a unique flavor. The small-pot rice noodles is the most common and popular way to eat rice noodles.

白族人的“东方奶酪”——羊乳饼【滇西小哥】

还记得上次在大理拍的乳扇吗?
和乳扇类似的还有大理剑川的乳饼,分为羊乳饼和牛乳饼两种,用当地人的话来说,乳饼肯定是羊奶做的才正宗!用山羊奶成的质量最好,白色块状,酷似豆腐块,所以也称为奶豆腐。
新鲜的羊奶煮开,加上发酵的酸水和当地特有的植物羊乳饼花,使奶清分离,做法和乳扇有相同之处~浓浓的羊乳香,软软糯糯的口感,油煎,蒸火腿,煮醪糟,烤芝士都别有一番风味~

Remember the episode about Rushan Cheese we shot in Dali? Similar to Rushan, people in Jianchuan, Dali also make milk cakes, including goat milk cake and the cow milk one. According to them, the goat milk cake is the more classic one! The goat milk cake has the highest quality. Since they are white and similar to the shape of tofu, they are also called milk tofu.
Boil fresh goat milk. Mix with fermented sour liquid and milk cake flowers unique to the area, to separate the whey. The recipe is similar to that of rushan. These goat milk cakes have an intense dairy fragrance and tender texture. It has a unique taste whether it's being fried, steamed with ham, boil with fermented glutinous rice or grilled over fire.

大王从小就不爱吃狗粮,家里吃什么,就给它吃什么……白米饭,南瓜,红薯,玉米都能吃上一大盆,还有爸爸小卖铺的零食,赶街天的大骨头……今天正儿八经给它做顿饭,希望大王能一直健康快乐,陪我们久一点,再久一点~

The pomegranates picked in July did not turn into wine until this January. It goes great with some stewed chicken and tripe soup while sitting by the fire. Nothing beats the wine, meat and fire combo in this cold winter night.

寻找云南香格里拉高原上的舌尖美味——藏餐【滇西小哥】

说起藏餐, 怎么少得了牦牛肉,酥油茶和糌粑呢?和鲁茸告别后我们去了一趟香格里拉吉迪村的牧场,除了草甸牛羊,这里还有香气扑鼻的糌粑和香甜沁人的酥油茶。
村里的老人们3到9月都在牧场放牧,每天都挤牛奶做酥油,第一次看到酥油的制作过程,也尝到了最新鲜的酥油茶的味道,走之前和爷爷买了一饼酥油和一些牦牛肉,爷爷还送了我青稞粉,回家后做一顿正儿八经的藏餐~除了酥油茶和糌粑,我还做了藏式火锅和耗牛肉干,也很有味道呢!

Speaking of Tibetan dishes, how can we forget yak meat, butter tea and tsampas? After saying goodbye to Lu, we went to the Jidi Village Pasture of Shangri-La. Besides yaks and goats, this place is also famous for its fragrance tsampa and delicious butter tea.
Between March to September, the elders usually herd the cattle in the pasture. They will collect milk and make butter daily. It's my first time seeing how the butter is made. I also had a try at the freshest butter tea. I bought a butter cake and some yak before leaving. The old man also gave me some hulless barley powder as a gift. I made some real Tibetan dishes at home. Besides butter tea and tsampa, I also made a Tibetan yak hot pot and some dried yak meat. It's very delicious.
