又到了一年一次吃年猪饭的时候,腌上一坛水腌菜,拌一碗:“红生”,炒一碗酸猪血,还有那金黄的火烧皮加上酸木瓜醋和莴笋丝一拌,用大锅炒一盆蚕豆炒肉,猪肝炒蒜苗,借着骨头汤再熬一锅酸耙菜~
在外打拼的亲戚们陆续回来,吃了一年的外卖,在冬月里吃上一桌年猪饭,哇,是过年的味道啊!

It's time for the annual pork stew feast again. On this day, we will prepare a jar of fermented pickled vegetables, a bowl of Red Raw Cold Dish and some stir-fried sour pig blood. We will also mix the golden roasted pig skin with sour papaya vinegar, make stir-fried pork with fava beans, stir-fried pig liver with garlic sprouts and brewed some pickled vegetables using the broth.
Family members who are working outside the village all come back one after another. After having take-outs for most of the year, the annual pork stew feast in the winter months always reminds us of the coming Spring Festival.

三个月前做的肉,今天可以吃了,
云南有一些少数民族会把肉腌制发酵成酸的来吃,有用芭蕉叶包裹发酵的,有用糯米和佐料腌制的,共同的特点就是用少量的盐,借助云南得天独厚的天气资源自然腌制发酵,肉有淡淡的酸味,香而不腻!

The meat I made three months ago is now ready.
Some ethnic minorities in Yunnan will ferment meat to make sour meat. Some will wrap meat with musa bajoo leaves and some will ferment the meat with sticky rice and spices. But they both use a small amount of salt and let the meat ferment in the unique natural environment of Yunnan. The meat will take on a slightly sour flavor and is very yummy yet not greasy.

每年过年,肯定是要舂粑粑的,蒸煮炸烤都是年味【滇西小哥】

赶在年前,终于把粑粑舂好了,除了去外婆家拜年要用一些,自己家也要吃不少,蒸熟了吃,烤着吃,炸着吃.......最地道的吃饭也就是煮上一锅杂汤,放上家里最好的食材,火腿,香肠,血肠,鸡蛋,蚕豆,豌豆尖~等等,煮一大锅,吃上一碗满是浓浓的年味~

Finnaly, we rushed to pounded some baba before the Chinese New Year. Besides from giving them as greetings to my grandma, we also eat them at home. Babas can be steamed, grilled or deep-fried........The most traditional way is to make a pot of soup with the best ingredients we have: ham, sausage, blood sausage, egg, fava beans, pea sprout, etc. Put baba slices into the soup and you will have a whole bowl of great festive feelings.

来自云南大理独特的酸味和乳香:乳扇【滇西小哥】

你们对大理的印象是什么?对我来说,还是这份奶香浓郁的乳扇,至今都无法用机器代替!
“云南十八怪,牛奶做成片片卖”说的就是大理的乳扇!
用新鲜的牛奶和自然发酵的酸浆融合,鲜奶中所含的蛋白质(主要是酪蛋白)发生变性而凝固,牛奶逐渐生成絮状物,用木棒轻搅汇聚后用手辅助搅捏成乳团。
将生成的乳团取出后,先压圆成饼,接着用两木棒在手中搓压成大长饼,最后将湿滑之乳饼片的两端拉出角形,缠铺于竹制梯状晾架上,晒干后的乳扇有特别浓郁的奶香味,油炸还是炭烤都特别好吃!

What is your impression of Dali? For me, it is this intense milky scent from Rushan cheese, which cannot be produced by machines yet!
The old saying “18 Odds of Yunnan, milk in pieces for sale” refers to Rushan cheese from Dali!
It is made of fresh milk and its naturally fermented sour liquid. The proteins in milk (mostly casein) denatures and starts to form solid clumps. Use a wooden stick to mix gently and squeeze the mixture into a diary dough with hands.
Take the dairy dough out and press into round shapes. Then use two sticks and twist them into longer shapes. Pull triangles out of the edge of each end and twine the pieces around bamboo trapezoid drying shelves. Sun-dried Rushan cheese has an intense milky scent. It is so very tasty, either fried or grilled!

大理雕梅——白族姑娘必备的手艺活【滇西小哥】

据说雕梅是判断一个白族女孩子是否心灵手巧的方式!用刻刀在梅肉上雕刻出连续曲折的花纹,从空隙处挤出梅核,轻压成菊花状,用白砂糖腌制一个月以上就好了。雕梅我最喜欢的吃法,就是配上五花肉,梅子的酸香和肉的味道完全融合在一起,入口即化,肥而不腻!

It is said that you can tell a Bai girl’s ingenuity from her carved plums! Use a knife to carve patterns onto a plum and squeeze the nucleus out. Slightly press the plum meat into the shape of a chrysanthemum to marinade with granulated sugar for at least a month. My favorite way to enjoy carved plums is to serve it alongside streaky pork.
