这个调料我们大家都很熟悉,放荤菜里,它就是:“肉”,放素菜里,它又伪装成了:“小土豆”!小豪说,这就是一位优秀的伪装者,食物界的影帝!

Spices of Four Seasons (II): Ginger.
An old saying goes that three slices of ginger in the morning benefits one more than the ginseng soup. Ginger can drive away the coldness and warm the stomach. It is a common daily spice, which can remove the fishy smell in meat and enhance the flavors of vegetables. It happens to be the ginger harvest season in Yunnan. These gingers are fresh and tender, with a mild level of spicy. They are the perfect ingredient in cold dishes, stir-fries or pickled vegetables.
This is a spice that we all know well. In meat dishes, it is a piece of meat; however, it is also a piece of potato among the vegetables! Xiaohao joked that it is truly an excellent disguiser, the best actor among foods!

花椒,麻辣菜品的灵魂伴侣【滇西小哥】

四季调料系列(三):花椒
花椒,它几乎占据着我们的日常生活,很多菜也会用花椒麻的特点来取名字,麻辣火锅,老麻抄手……我对于花椒的喜爱程度简直可以和辣椒相媲美,每次做麻辣系的菜都会放超多花椒,一日三餐,顿顿都有!
姨妈家的花椒,香味浓郁,麻味十足,跟奶奶去姨妈家摘了一大筐花椒,做了一大锅花椒麻麻鱼!最后剩下的花椒,榨了些花椒油,晒干储存可以吃上一整年~

Spices of Four Seasons (III): Sichuan pepper
Sichuan pepper seems to be ubiquitous in our meals. Many dishes are also named after the spice's numb-spiciness, such as numbing and spicy hot pot, Hot and Spicy Minced Meat Wonton, etc...I like Sichuan pepper nearly as much as I like chilies. Each time I make numbing and spicy dishes, I would put in so much Sichuan pepper that nearly in every meal, there is Sichuan pepper in it.
My auntie grows one of the best Sichuan pepper with a strong numb-spiciness in the area. I went to pick a large basket of Sichuan pepper with my grandma and made a whole pot of Sichuan pepper spicy fish. I also made some Sichuan pepper oil. Once completely dried, they can be store for a whole year.

我们当地叫它山胡椒,有“味之山妖”的美誉。它的根和果子都可以当佐料,木姜子味道比较独特,能给食物增添特殊的香气,但是接受不了的人也说它是种劝退北方人的南方调料,可与鱼腥草媲美!上山摘了一筐回来做木姜子炖鸭和几道小菜,顺便炸点木姜子油存着!

It's also called wild pepper and has a nickname of the strange and unique flavor. Both its root and fruits can be used as spices. Litsea has an unique flavor and can add a special fragrance to dishes. However, those who cannot stand it says that it's the spice that keeps Northerners away, just like the cordate houttuynia! I picked a basket of litsea in the mountains and made stewed duck as well as several dishes. I also fried some litsea oil for later usage.

我当时找了当地种植的五种颜色的花生,后来家里也没种太多颜色的花生了,种杂了会影响产量,也就种了红白两种。
前几天下雨前去拔了一些回来,雨后晴了几天和奶奶一起去拔完了
花生吃法就太多太多了,凉拌,炖猪蹄,炖排骨,油酥,舂碎拌菜……

I used peanuts of 5 colors back then. Since too many kinds of peanuts may negatively affect its yield, we only planted red and white peanuts from then on.
I pulled some peanuts before the rain. After it cleared, my grandma helped me with the rest of the peanuts.
Peanuts can be eaten in various ways. You can make them into cold dishes, stew them with pig trotter or ribs, deep-fry them or use crushed peanuts as a seasoning spices.

I saw an Alaskan Malamute on the street in 2016 and I liked it very much. The second year I went back to Yunnan, I got my own dog. He was somehow timid at the time, so I named him Dawang (meaning the big boss). Dawang accompanied me everyday in the village and has brought me enormous joy and happiness. I do hope that he can always stay by my side, as happy and healthy as can be. Thank you guys for liking Dawang!
