年初二,用水果做一桌拜年团圆菜【滇西小哥】

每年初二,姑妈都会到家里来拜年,过年这几天连续大鱼大肉的,吃腻了,之前做了一些果酱,家里还有一些水果,就想着做些小清新的水果菜,没想到还挺好吃的,老人小孩都觉得新鲜好吃~

云南有一类美味叫“撒撇” ,“撒”是傣语,是“拌生”的意思;在云南,万物皆可“撒”,猪撒,牛撒,鱼撒,水果撒,每一款都独具特色。“撇”是指“苦肠” ,而最经典和难忘的还是“牛苦撒撇”,就是用牛苦肠水拌生牛肉,制作复杂讲究,还有点生猛,但对于从小吃到大的云南人来说,便是想到就能流口水的稀奇美味。

Here in Yunnan, we have a special delicacy named Sapie. Sa, which comes from Dai language, means seasoned raw ingredients. In Yunnan, everything can be made into a sa, such as pork, beef, fish or fruits. Each has its unique flavor. Pie means the bitter intestines, or bile. However, the most typical dish is of course bitter beef sapie. It is a mixture of beef bile and raw beef, which requires much effort to make and is very tough. But for us from Yunnan, who started to enjoy the dish since we were kids, just the thought of it will make us drool.

云南牛味百态(三)
第一次吃毛肚火锅是在四川上大学的时候,那时觉得好稀奇,一盘毛肚几十块钱也没几片。火锅涮毛肚讲究的是七上八下,意思就是来回涮个七八下就可以吃了,入口清脆,口感独特。从那以后毛肚就成了我吃火锅的必备食材,这次拿了一整个毛肚,终于实现毛肚自由了。

The first time I tried tripe hot pot was when I in college in Sichuan province. I found it very rare, with a few slices costing much money. The key to enjoy tripe is 7 lifts & 8 dips, meaning it can be served with 7 or 8 rounds of dips in boiling hot pot. In this way, the tripe will have a crunchy and special texture. Ever since then, tripe has become one of my must-have hot pot ingredient. I prepared a whole tripe this time so that I can have as much tripe as I want.

又到了杀年猪做过年菜的時候了,吹豬肝、卷蹄、香肠,你们吃过吗?【滇西小哥】

有多少人是从两年前的那期吹肝认识我的呢?今年我们又做吹肝了
今年的年猪急急忙忙的就宰了,一家人忙到了晚上,不过该做的过年菜都做了,腌制了火腿,排骨,装了香肠,吹肝,还特意做了卷蹄。在我们所有的过年菜里,卷蹄是工艺最复杂的了,需要完整的剥下猪蹄的皮,塞上猪瘦肉,不能有一点空隙,再认真缝合上,稻草绑紧后煮熟腌制数月,口感特别Q弹,也有淡淡酸鲊肉的味道~

How many of you have known me since the cured blown pig liver episode two years ago? We made that dish again this year.
This year, we butchered the annual pig in a hurry. My family and I worked till late night and managed to prepare all dishes for the lunar new year. We made not only hams, ribs, sausages, cured blown pig liver, but also stuffed trotters. Among all annual pig feast dishes, stuffed trotters require the most efforts. We will have to peel the skin of a trotter integrally to stuff lean meat inside, leaving no gaps at all. Then stitch the skin and tie with straw tightly to boil until cooked. Marinade the trotter for months and it will become chewy and spongy, which tastes like sour meat.

牛皮作为食材,如果一定要挑点毛病出来,那就是太难处理了。需要旺火反复烧2小时,再多次浸泡清洗。完全处理干净的牛皮,用来炸、煮、卤、皮冻、凉拌都可,猪皮可以怎么吃牛皮就能怎么吃!口感比猪皮更丰富软糯,一张黄牛皮吃下去,感觉整个人都是满满的胶原蛋白~

一道“名不副实”的腌辣菜——猪肝鮓【滇西小哥】

祖辈留下来的排骨储存方法中,除了做腊排骨,骨头鮓,还有一种猪肝鮓。同样的调料,光有排骨就叫“骨头鮓”,是我们施甸的特色腌辣,如果加上猪肚和肥肠,就成了大理的“猪肝鮓”, 这道菜全程没有用到猪肝,但是祖辈们都叫它猪肝鮓,口味和吃法都类似,可蒸,可炒,可烩……当成一种特色调味料~每年杀年猪都会做一些储存。

到了晚上,供完月亮,我们一家人就围坐吃月饼,聊聊家常,心情好再打个歌。云南人有喜庆节日都会聚在一起打歌。月满杯盈,一切的圆满只为团圆,希望你们和家人都可以健康、开心,爱你们~

How did you celebrate Mid-Autumn Day? We went to the market in the day and bought some candies and fruits for the festival. I also visited granny's and brought some snacks. This is call Holiday Visit. As a present in return, granny also picked some fruits and vegetables for me to bring home.
At night, after worshiping the moon, we got together and enjoyed the mooncakes. We chatted and danced to the music. Here in Yunnan, people would dance to music together during the festivals.
