为了储存猪肉,将猪肉装进猪肚子里,也是祖辈们的聪明智慧!猪香肚,肉蛋,包腊都是这道美食的不同名字,一个猪肚能装30斤左右的猪肉,因为制作时间长,加上切开后就没有办法继续风干,自然风干越久越香,通常只有家里来了重要的客人才会吃猪肚肉,所以也就成了彝族人家用来招待贵客的一道菜品~

Stuff pork inside pork tripes for storage is one of the wits of our ancestors! Stuffed Pork Tripe, Pork Egg or Wrapped Preserved Pork all refer to this delicacy. A tripe can wrap around 15 kg of pork. The making of one such tripe takes much time. Besides, once cut open, it cannot be left to dry again. The longer it's been preserved, the tastier it will be. As a result, such a delicacy is only served for the most distinctive guests. Gradually, this tradition has passed down from generation to generation.

舂(chōng)筒不响,吃饭不香
“舂”是景颇族最具有特色的一种美食加工方式!景颇族人家里都会有一个竹子做成的舂筒,舂的工具也比较讲究,上山挖了一个老竹根,花了两天做了舂筒,在景颇族人眼里似乎没有什么食材是不可以拿来“舂一下”的,任何食材都能放舂筒里舂出美味佳肴~

A meal is not proper without using the pestle.
“Pound” is a special Jing-po cooking techniques! In every Jing-po household, you can find a pestle and a bowl made of bamboo. The tools are special made as well. I dug an old bamboo root in the mountain and spent two days making the pounding bowl. To Jing-po people, everything can be pounded. They can make delicious meal with almost every ingredient.

爸爸最爱的菜:云南腊排骨,一道因储存食材而发现的美味【滇西小哥】

I like all kinds of colorful stones, large and small. So I picked some with Dawang alongside Nujiang. I made several dishes, including pepper salt stone pancakes, stone fish in wooden bucket and roasted sausage on stones with the black stones. I also made two paintings with the rest. 冬月,一定要吃一顿年猪饭才算完整【滇西小哥】

又到了一年一次吃年猪饭的时候,腌上一坛水腌菜,拌一碗:“红生”,炒一碗酸猪血,还有那金黄的火烧皮加上酸木瓜醋和莴笋丝一拌,用大锅炒一盆蚕豆炒肉,猪肝炒蒜苗,借着骨头汤再熬一锅酸耙菜~
在外打拼的亲戚们陆续回来,吃了一年的外卖,在冬月里吃上一桌年猪饭,哇,是过年的味道啊!

It's time for the annual pork stew feast again. On this day, we will prepare a jar of fermented pickled vegetables, a bowl of Red Raw Cold Dish and some stir-fried sour pig blood. We will also mix the golden roasted pig skin with sour papaya vinegar, make stir-fried pork with fava beans, stir-fried pig liver with garlic sprouts and brewed some pickled vegetables using the broth.
Family members who are working outside the village all come back one after another. After having take-outs for most of the year, the annual pork stew feast in the winter months always reminds us of the coming Spring Festival.

猪大肠的独特吃法:豆腐血肠【滇西小哥】

祖辈们会把猪的每个部位都用到极致,猪血,猪肉加上豆腐和各种佐料一起装入大肠里,做成我们当地特色的豆腐血肠,有豆腐和肉的香味,挂干后蒸熟炸干水份,用猪油覆盖储存,留着吃一整年!你们香肠吃甜的还是吃咸的?

Our ancestors would make the most of every part of a pig. Mix pig blood with pork, tofu and spices to fill into pig intestines and you will get the Mixed Tofu and Blood Sausage, a local cuisine special to our place. It has mixed flavors of tofu and pork. We would usually hang it to dry, then steam until cooked and deep-fry to remove the moisture. Cover the sausages with lard and they can preserve for a whole year! Which sausage flavor do you like, sweet or salty?

一种味道独特的肉——酸肉【滇西小哥】

三个月前做的肉,今天可以吃了,
云南有一些少数民族会把肉腌制发酵成酸的来吃,有用芭蕉叶包裹发酵的,有用糯米和佐料腌制的,共同的特点就是用少量的盐,借助云南得天独厚的天气资源自然腌制发酵,肉有淡淡的酸味,香而不腻!

The meat I made three months ago is now ready.
Some ethnic minorities in Yunnan will ferment meat to make sour meat. Some will wrap meat with musa bajoo leaves and some will ferment the meat with sticky rice and spices. But they both use a small amount of salt and let the meat ferment in the unique natural environment of Yunnan. The meat will take on a slightly sour flavor and is very yummy yet not greasy.

牛屎酒—傣族人存酒的特殊方式 【滇西小哥】

第一次听说这个名字的时候,我以为是用牛屎发酵来酿的酒,就特意请教做牛屎酒的龙哥,傣族自家烧的小锅米酒放置一年以上才能转入土罐子里,用盐霜树做木塞子,裹上牛皮纸,热蜂蜡封口,再敷上新鲜牛屎存储2年以上,才是正儿八经的牛屎酒。
爷爷是一个爱酒的人,对他来说,酒便是生活最好的调味品。第一次拍酒的视频,就是三年前的玉米酒,很快,已经过去三年了

The first time I heard the name, I thought the wine was made of bull dung. So I asked Brother Long who is good at making bull dung wine. He told me that the decent bull dung wine uses homemade rice wine which has been stored for over a year before taking it into a jar. The plugger should be made of a salty tree branch and wrapped in brown paper. The jar needs to be sealed with melted bee wax then cover the bottleneck with fresh bull dung to store for at least two year.
My grandpa enjoys drinking wine. To him, wine is the best seasoning of life. I made my first video about corn wine three years ago. How time flies! It’s been three years already.

独一无二的藏族美味——尼西黑陶土鸡【滇西小哥】

尼西是香格里拉县的一个藏族乡村,是旧时茶马古道的必经之路,在这里有着2千多年的制陶历史,因为特殊的烧制工艺,做出来的陶是黑色,大家也都称这个地方烧制的陶为:尼西黑陶。
尼西除了黑陶还有尼西土鸡,长两年不过就2斤不到,用尼西黑陶来煮尼西鸡,又叫“藏全鸡”,“黑陶煮鸡”,味道特别鲜美,这吃过就让人念念不忘的味道,来香格里拉旅游都应该要尝尝~

Nixi is a Tibetan village in Shangri-La, and was a part of the the Ancient Tea Horse Road. It has more than 2,000-year's history of potting. Due to its special way of firing, the pottery turns out black. As a result, people call them Nixi black pottery.
Apart from black pottery, Nixi is also home to Nixi chicken. These chicken is no heavier than 1 kg after being raised for 2 years. Once cooked in Nixi black pottery, the chicken tastes extremely good. Do have a try when you visit Shangri-La.

每年过年,肯定是要舂粑粑的,蒸煮炸烤都是年味【滇西小哥】

赶在年前,终于把粑粑舂好了,除了去外婆家拜年要用一些,自己家也要吃不少,蒸熟了吃,烤着吃,炸着吃.......最地道的吃饭也就是煮上一锅杂汤,放上家里最好的食材,火腿,香肠,血肠,鸡蛋,蚕豆,豌豆尖~等等,煮一大锅,吃上一碗满是浓浓的年味~

Finnaly, we rushed to pounded some baba before the Chinese New Year. Besides from giving them as greetings to my grandma, we also eat them at home. Babas can be steamed, grilled or deep-fried........The most traditional way is to make a pot of soup with the best ingredients we have: ham, sausage, blood sausage, egg, fava beans, pea sprout, etc. Put baba slices into the soup and you will have a whole bowl of great festive feelings.
