施甸臭豆豉——冬日稻草窝里捂出的美味【滇西小哥】

进入11月,村里就开始捂臭豆豉了,煮软的黄豆经过三天四夜的发酵,捂出浓郁的臭味,也有细细的拉丝……吃起来特别香~
可以加调料舂成豆酱,也可以泡施甸特有的水豆豉,或者做成麻辣下饭的油豆豉也行。
可以搭配一切美食,荤的素的加上臭豆豉都能变成另外一种美味!

Villagers started to make stinky fermented soy bean sauce in November. Usually, we would ferment boiled soybeans for three days and four nights. It will then give out an intense stinky smell and turn stretchy, which is very tasty.
They can then be seasoned and pounded to make soy bean paste, soaked to become the special Shidian fermented soy bean sauce or mixed with oil to become the spicy and appetizing oily fermented soy bean sauce.
The stinky fermented soybean sauce goes well with almost every ingredient, leveling up the texture and taste of both vegetables and meat.

稻草窝窝里捂出的臭豆鼓,做成油豆豉鱼,及其美味【滇西小哥】

家里每年都种一些黄豆,除了平日里做豆腐外,会留一些到了冬天的时候做臭豆鼓,将黄豆泡发煮软后放稻草堆里发酵,捂出淡淡的豆鼓香,就可以直接加调料凉拌,是一道特色的傣味菜,也可以晒干后做成油豆鼓或者水豆鼓,装坛子里密封储存,水豆鼓是施甸最具有代表性的特产了,我们经常用来拌一些蔬菜,小时候在家里,吃习惯了不觉得美味,后来离家远了却开始想念这淡淡的豆鼓香,也开始爱吃用豆鼓做的很多美食!

Many of you may not be aware that Yunnan is the main production area of small coffee beans. Thanks to the hot and dry valley climate, the coffee beans have a balanced taste with low acid levels, mild bitterness, intense fruity aroma and a fuller-body. Yunnan coffee is warmly welcomed in the market. I picked a basket of coffee beans along Lujiang River and tried roasting my own coffee beans at home. In this quiet afternoon, let's enjoy a cup of hot coffee.

In almost every market of Yunnan, you will find some plain looking steamed buns. They look somewhat cluttered and messy and are called crispy stuffed buns. It is one of the traditional Dian pastries with crispy wrappers and savory pork stuffings.

黄豆——这种百变食材有多少种吃法?【滇西小哥】

有些东西在不同的年纪名字还不一样,像它,年轻的时候叫毛豆,老了叫黄豆,这颗小小的黄豆,可以磨成豆浆喝,也可以做豆腐脑,豆花,豆腐,豆干,臭豆腐等不同形态的食物。
豆干的制作是在豆腐的基础上再施加压力,压到几乎没有水份了就行,这次做了两个味道的豆干,剩下的卤制后烟熏半干储存,也是另一份美味~

Some ingredients have different name when growing up. Take soybeans for example. We call them edamame when they are young and tender, but soybeans when they are old and ripe. Soybeans can be grinded to make soybean milk, or made into various foods such as tofu jelly, tofu pudding, tofu, dried tofu, stinky tofu, etc.
To make dried tofu, just press harder than that of making tofu, until most of the juice has been extracted. I made two flavors of dried tofu. I also marinaded the rest to smoke until half-dry, which is delicious nevertheless.

大王从小就不爱吃狗粮,家里吃什么,就给它吃什么……白米饭,南瓜,红薯,玉米都能吃上一大盆,还有爸爸小卖铺的零食,赶街天的大骨头……今天正儿八经给它做顿饭,希望大王能一直健康快乐,陪我们久一点,再久一点~

Do you still remember the first featured video of Dawang half a year ago? How time flies. He is now 3 years old and has grown from a cute little thing into a strong dog weighing 61.5 kg.

白族人的“东方奶酪”——羊乳饼【滇西小哥】

还记得上次在大理拍的乳扇吗?
和乳扇类似的还有大理剑川的乳饼,分为羊乳饼和牛乳饼两种,用当地人的话来说,乳饼肯定是羊奶做的才正宗!用山羊奶成的质量最好,白色块状,酷似豆腐块,所以也称为奶豆腐。
新鲜的羊奶煮开,加上发酵的酸水和当地特有的植物羊乳饼花,使奶清分离,做法和乳扇有相同之处~浓浓的羊乳香,软软糯糯的口感,油煎,蒸火腿,煮醪糟,烤芝士都别有一番风味~

Remember the episode about Rushan Cheese we shot in Dali? Similar to Rushan, people in Jianchuan, Dali also make milk cakes, including goat milk cake and the cow milk one. According to them, the goat milk cake is the more classic one! The goat milk cake has the highest quality. Since they are white and similar to the shape of tofu, they are also called milk tofu.
Boil fresh goat milk. Mix with fermented sour liquid and milk cake flowers unique to the area, to separate the whey. The recipe is similar to that of rushan. These goat milk cakes have an intense dairy fragrance and tender texture. It has a unique taste whether it's being fried, steamed with ham, boil with fermented glutinous rice or grilled over fire.

Yunnan is rich in natural resources. More than 300 wild Asian elephants live in Xishuangbanna, Yunnan. Due to their small numbers, they are in great need of protection. I'm honored to visit the living habitats of wild Asian elephants and learn more about them. The local environmental protection groups have done much to protect the elephants. While it's a good start, there is much more we can do. Sincerely hope that more people can join us to protect these wild Asian elephants and contribute to the harmony between men and elephants.
I do hope that one day, we can truly achieve our vision that there are birds in the woods, fish in the water and animals on the ground. Let work together to build and protect our harmonious homeland.

I like all kinds of colorful stones, large and small. So I picked some with Dawang alongside Nujiang. I made several dishes, including pepper salt stone pancakes, stone fish in wooden bucket and roasted sausage on stones with the black stones. I also made two paintings with the rest. 牛皮作为食材,如果一定要挑点毛病出来,那就是太难处理了。需要旺火反复烧2小时,再多次浸泡清洗。完全处理干净的牛皮,用来炸、煮、卤、皮冻、凉拌都可,猪皮可以怎么吃牛皮就能怎么吃!口感比猪皮更丰富软糯,一张黄牛皮吃下去,感觉整个人都是满满的胶原蛋白~

「一席一果」水果药王——百香果【滇西小哥】

百香果,我们当地叫西番莲,甜的直接吃,酸的加点白砂糖一起吃,长大后发现,原来百香果还可以拿来做菜,百香果有多种维生素和微量元素,果汁果皮都是宝,所以被称为「果汁之王」、「水果药王」,它有独特的酸味和果香,我们喜欢用它的果酸来调味,做蘸水,拌菜,煮鱼煮鸡都特别鲜美~

藕粉———盛夏荷塘里的营养美味【滇西小哥】

莲藕的成熟季节大多在8月份,云南的第一批藕已经成熟啦,云贵高原充足的日照环境下种出来的藕,脆脆甜甜的,去田里挖了几个回来,搞几道当地的小菜尝个鲜,仿佛吃到了夏天阳光的味道!

Lotus roots usually harvest in August. However in Yunnan, the first lotus roots can be harvested already. They are crispy and sweet. So I made several local dishes with them. Thanks to the great natural environment of Yunnan, you can taste the summer sunshine even in the lotus roots.
