白族人的“东方奶酪”——羊乳饼【滇西小哥】

还记得上次在大理拍的乳扇吗?
和乳扇类似的还有大理剑川的乳饼,分为羊乳饼和牛乳饼两种,用当地人的话来说,乳饼肯定是羊奶做的才正宗!用山羊奶成的质量最好,白色块状,酷似豆腐块,所以也称为奶豆腐。
新鲜的羊奶煮开,加上发酵的酸水和当地特有的植物羊乳饼花,使奶清分离,做法和乳扇有相同之处~浓浓的羊乳香,软软糯糯的口感,油煎,蒸火腿,煮醪糟,烤芝士都别有一番风味~

Remember the episode about Rushan Cheese we shot in Dali? Similar to Rushan, people in Jianchuan, Dali also make milk cakes, including goat milk cake and the cow milk one. According to them, the goat milk cake is the more classic one! The goat milk cake has the highest quality. Since they are white and similar to the shape of tofu, they are also called milk tofu.
Boil fresh goat milk. Mix with fermented sour liquid and milk cake flowers unique to the area, to separate the whey. The recipe is similar to that of rushan. These goat milk cakes have an intense dairy fragrance and tender texture. It has a unique taste whether it's being fried, steamed with ham, boil with fermented glutinous rice or grilled over fire.

大家吃过自己做的土豆片、大辣片吗?在云南,说到小零食,肯定离不开自己做的土豆片了,我们可以一天三顿都吃土豆,连说话都是一股“洋芋味”,用土豆切片直接炸成金黄酥脆的土豆片,还有麻麻辣辣的豆皮做的大辣片,酥脆爽口的小米锅巴,入口即化的绿豆糕,冰冰凉凉的糯米冰棒……承包了这个夏日的小零食!

我喜欢各种各样彩色的石头,大的小的都很喜欢,带着大王在怒江边上捡了一些,挑出黑色的小石头做了一些吃的,椒盐石头饼、木桶石头鱼、石头烤肠,剩下的做成两幅手工小画~你们喜欢吗?

I like all kinds of colorful stones, large and small. So I picked some with Dawang alongside Nujiang. I made several dishes, including pepper salt stone pancakes, stone fish in wooden bucket and roasted sausage on stones with the black stones. I also made two paintings with the rest. Do you like them?

云南山里的野生小精灵——七彩杂菌【滇西小哥】

雨季的云南,就是七彩斑斓的样子,连菌子都是彩色的。雨过天晴的清晨,那肯定是上山采菌子了,颜色艳丽,味道鲜美,这次上山采摘了几十种不同口感的菌子,一锅炖!鲜甜爽口,喝上一晚杂菌火锅,哇,幸福的味道~
(地域差异,可食用菌类各有不同,大部分没熟的野生菌都可能会有毒哦,记得不要生吃!请勿食用不认识的菌类!)

During the wet season, Yunnan is filled with various colors. Even the fungi have different colors. After a rainy night, the next thing to do is to pick some fungi in the mountains. They come in various colors and great tastes. I picked many different fungi in the mountains and stew them all together. The fungi hot pot is very refreshing. What a happy taste.

滇西的中秋,光吃月饼怎么够?【滇西小哥】

今年中秋,你们怎么过?白天我们会去逛集市,买一些过节吃的糖和水果,然后去外婆家送一点好吃的,这叫:“拜节”。 作为“回礼”,外婆也摘了些瓜果蔬菜给我带回家。
到了晚上,供完月亮,我们一家人就围坐吃月饼,聊聊家常,心情好再打个歌。云南人有喜庆节日都会聚在一起打歌。月满杯盈,一切的圆满只为团圆,希望你们和家人都可以健康、开心,爱你们~

How did you celebrate Mid-Autumn Day? We went to the market in the day and bought some candies and fruits for the festival. I also visited granny's and brought some snacks. This is call Holiday Visit. As a present in return, granny also picked some fruits and vegetables for me to bring home.
At night, after worshiping the moon, we got together and enjoyed the mooncakes. We chatted and danced to the music. Here in Yunnan, people would dance to music together during the festivals. During this get-together season of the year, with a bright full moon in the sky and great wine in our hands, I do wish you and your families good health and happiness everyday. Love you guys.

三年时间,一样的板栗鸡和炒板栗,不一样的是小豪长大了,学习压力也变大了,他开始忙碌的学习,周末补课,不能像小时候一样粘着我,但还是同样喜欢吃我做的菜,希望以后也能一直陪着他长大~

怒江让云南这个地方多了一份神奇,怒江边上能种很多热带的水果,荔枝,芒果,香蕉,鸡蛋果等等。酷热的夏天,去采了些晶莹剔透的荔枝,做一些我家里人没有吃过的菜,水晶荔枝虾球、冰爽荔枝啤酒、荔枝脆皮烤鱼......这个新鲜的味觉体验,既解暑又满足~

I made shrimp balls with crystal lLychees, refreshing lychee beer and roast fish with lychees. The novel taste of lychee dishes drives the hotness away and is very satisfying.

寻找云南香格里拉高原上的舌尖美味——藏餐【滇西小哥】

说起藏餐, 怎么少得了牦牛肉,酥油茶和糌粑呢?和鲁茸告别后我们去了一趟香格里拉吉迪村的牧场,除了草甸牛羊,这里还有香气扑鼻的糌粑和香甜沁人的酥油茶。
村里的老人们3到9月都在牧场放牧,每天都挤牛奶做酥油,第一次看到酥油的制作过程,也尝到了最新鲜的酥油茶的味道,走之前和爷爷买了一饼酥油和一些牦牛肉,爷爷还送了我青稞粉,回家后做一顿正儿八经的藏餐~除了酥油茶和糌粑,我还做了藏式火锅和耗牛肉干,也很有味道呢!

Speaking of Tibetan dishes, how can we forget yak meat, butter tea and tsampas? After saying goodbye to Lu, we went to the Jidi Village Pasture of Shangri-La. Besides yaks and goats, this place is also famous for its fragrance tsampa and delicious butter tea.
Between March to September, the elders usually herd the cattle in the pasture. They will collect milk and make butter daily. It's my first time seeing how the butter is made. I also had a try at the freshest butter tea. I bought a butter cake and some yak before leaving. The old man also gave me some hulless barley powder as a gift. I made some real Tibetan dishes at home. Besides butter tea and tsampa, I also made a Tibetan yak hot pot and some dried yak meat. It's very delicious.

小锅米线——云南街头巷尾的地道美味【滇西小哥】

云南人是离不开米线的,最地道的小锅米线那就必须用傣族的酸浆米线 ,将当年的新米经过发酵,磨浆,澄滤,煮浆,舂浆等十几道工序做成,时间周期长,味道也很独特,这也是在云南,米线最常见和受欢迎的吃法。
高汤在小铜锅里煮开,加上酱帽子和爱吃的蔬菜,还有酸腌菜和辣椒油提味,百吃不厌,走,甩米线去了~

Yunnan people cannot live without rice noodles. The best small-pot rice noodles use dai's sour liquid rice noodles. Ferment the new rice of the season to grind, settle and filter, boil and pound to make the sour liquid rice noodles. It takes a long time to make, but has a unique flavor. The small-pot rice noodles is the most common and popular way to eat rice noodles.
Boil the broth in a small cooper pot to add some meat sauce and greens. Season with acid pickles and chili oil. You will never have enough of it here in Yunnan. Let's go and enjoy the rice noodles.

藕粉———盛夏荷塘里的营养美味【滇西小哥】

莲藕的成熟季节大多在8月份,云南的第一批藕已经成熟啦,云贵高原充足的日照环境下种出来的藕,脆脆甜甜的,去田里挖了几个回来,搞几道当地的小菜尝个鲜,仿佛吃到了夏天阳光的味道!

Lotus roots usually harvest in August. However in Yunnan, the first lotus roots can be harvested already. They are crispy and sweet. So I made several local dishes with them. Thanks to the great natural environment of Yunnan, you can taste the summer sunshine even in the lotus roots.

《民族底片》是一部突破传统纪录片叙事手法,由中国摄影家摄影作品构成的高清纪录片——《民族底片》,在新中国60华诞之际通过上海东方卫视向全国首播。
《民族底片》全长56集,每集5分钟,以40多位中国知名摄影家的2000多幅摄影作品为蓝本,通过色彩斑斓、富有创意的视听形态,展现中国56个民族和谐发展的生活状态。
纪录片中部分摄影作品来自中国摄影家协会理事、上海市摄影家协会副主席陈海汶等14位摄影家组成的拍摄组。这一团队历时1年翻山越岭10万公里,辗转途经28个省市自治区,经历了汶川大地震后的数次余震和塌方,先后拍摄了57000多幅图片素材。
纪录片主创人员由出生于上世纪七八十年代的张路亚、朱伟等担任。来自上海的80后制作人员朱伟表示,利用数码高清技术等将平面图像处理成符合观众收视习惯的纪录片影像,是一项巨大挑战。
