Thanks to the hot and dry valley climate, the coffee beans have a balanced taste with low acid levels, mild bitterness, intense fruity aroma and a fuller-body. Yunnan coffee is warmly welcomed in the market. I picked a basket of coffee beans along Lujiang River and tried roasting my own coffee beans at home. In this quiet afternoon, let's enjoy a cup of hot coffee.

雨季的山里,除了各种菌,就是笋了,甜笋,苦笋,山竹笋……每次提到笋,唾液都开始分泌了。今天介绍的是苦笋,我们也叫大竹笋,切片后煮熟做成“黄笋”,也可以切丝后加水浸泡发酵数日做成“酸笋”,酸酸臭臭,但它的独特美味,真的无可替代!
不同的笋,不同的做法,都会有不一样的味觉体验,但是笋的那种鲜甜是非常让人回味和满意的,雨季,一定要好好吃一顿笋子~

寻找云南香格里拉高原上的舌尖美味——藏餐【滇西小哥】

说起藏餐, 怎么少得了牦牛肉,酥油茶和糌粑呢?和鲁茸告别后我们去了一趟香格里拉吉迪村的牧场,除了草甸牛羊,这里还有香气扑鼻的糌粑和香甜沁人的酥油茶。
村里的老人们3到9月都在牧场放牧,每天都挤牛奶做酥油,第一次看到酥油的制作过程,也尝到了最新鲜的酥油茶的味道,走之前和爷爷买了一饼酥油和一些牦牛肉,爷爷还送了我青稞粉,回家后做一顿正儿八经的藏餐~除了酥油茶和糌粑,我还做了藏式火锅和耗牛肉干,也很有味道呢!

Speaking of Tibetan dishes, how can we forget yak meat, butter tea and tsampas? After saying goodbye to Lu, we went to the Jidi Village Pasture of Shangri-La. Besides yaks and goats, this place is also famous for its fragrance tsampa and delicious butter tea.
Between March to September, the elders usually herd the cattle in the pasture. They will collect milk and make butter daily. It's my first time seeing how the butter is made. I also had a try at the freshest butter tea. I bought a butter cake and some yak before leaving. The old man also gave me some hulless barley powder as a gift. I made some real Tibetan dishes at home. Besides butter tea and tsampa, I also made a Tibetan yak hot pot and some dried yak meat. It's very delicious.

老树核桃——沉淀百年的果仁香气【滇西小哥】

你们知道200年老树结的核桃有多香吗?9月打回来的老树核桃,剥了4个多小时的壳,烤一盘蜂蜜核桃仁,再熬一锅纯正核桃油,油香四溢,这就是核桃树沉淀百年的味道~
踩着秋天的尾巴,用核桃油煎一份仪式感满满的牛排,做一锅铁板烧,既温暖又美味!

Do you know how good the taste of walnuts from a 200-year-old tree is? I collected some walnuts back in September and spent four hours cracking them open. I made some roasted walnuts with honey and pure walnut oil. How good the fragrant is. It is truly the gift from time.

又到了杀年猪做过年菜的時候了,吹豬肝、卷蹄、香肠,你们吃过吗?【滇西小哥】

有多少人是从两年前的那期吹肝认识我的呢?今年我们又做吹肝了
今年的年猪急急忙忙的就宰了,一家人忙到了晚上,不过该做的过年菜都做了,腌制了火腿,排骨,装了香肠,吹肝,还特意做了卷蹄。在我们所有的过年菜里,卷蹄是工艺最复杂的了,需要完整的剥下猪蹄的皮,塞上猪瘦肉,不能有一点空隙,再认真缝合上,稻草绑紧后煮熟腌制数月,口感特别Q弹,也有淡淡酸鲊肉的味道~

How many of you have known me since the cured blown pig liver episode two years ago? We made that dish again this year.
This year, we butchered the annual pig in a hurry. My family and I worked till late night and managed to prepare all dishes for the lunar new year. We made not only hams, ribs, sausages, cured blown pig liver, but also stuffed trotters. Among all annual pig feast dishes, stuffed trotters require the most efforts. We will have to peel the skin of a trotter integrally to stuff lean meat inside, leaving no gaps at all. Then stitch the skin and tie with straw tightly to boil until cooked. Marinade the trotter for months and it will become chewy and spongy, which tastes like sour meat.

一道“名不副实”的腌辣菜——猪肝鮓【滇西小哥】

祖辈留下来的排骨储存方法中,除了做腊排骨,骨头鮓,还有一种猪肝鮓。同样的调料,光有排骨就叫“骨头鮓”,是我们施甸的特色腌辣,如果加上猪肚和肥肠,就成了大理的“猪肝鮓”, 这道菜全程没有用到猪肝,但是祖辈们都叫它猪肝鮓,口味和吃法都类似,可蒸,可炒,可烩……当成一种特色调味料~每年杀年猪都会做一些储存。

Among the traditional ways to preserve ribs, besides preserved ribs and preserved bones, there is also one recipe called preserved pig liver. 施甸臭豆豉——冬日稻草窝里捂出的美味【滇西小哥】

进入11月,村里就开始捂臭豆豉了,煮软的黄豆经过三天四夜的发酵,捂出浓郁的臭味,也有细细的拉丝……吃起来特别香~
可以加调料舂成豆酱,也可以泡施甸特有的水豆豉,或者做成麻辣下饭的油豆豉也行。
可以搭配一切美食,荤的素的加上臭豆豉都能变成另外一种美味!

Villagers started to make stinky fermented soy bean sauce in November. Usually, we would ferment boiled soybeans for three days and four nights. It will then give out an intense stinky smell and turn stretchy, which is very tasty.
They can then be seasoned and pounded to make soy bean paste, soaked to become the special Shidian fermented soy bean sauce or mixed with oil to become the spicy and appetizing oily fermented soy bean sauce.
The stinky fermented soybean sauce goes well with almost every ingredient, leveling up the texture and taste of both vegetables and meat.
