酸笋——云南傣味菜里的灵魂调味料【滇西小哥】

雨季的山里,除了各种菌,就是笋了,甜笋,苦笋,山竹笋……每次提到笋,唾液都开始分泌了。今天介绍的是苦笋,我们也叫大竹笋,切片后煮熟做成“黄笋”,也可以切丝后加水浸泡发酵数日做成“酸笋”,酸酸臭臭,但它的独特美味,真的无可替代!
不同的笋,不同的做法,都会有不一样的味觉体验,但是笋的那种鲜甜是非常让人回味和满意的,雨季,一定要好好吃一顿笋子~

Today, I want to introduce the bitter bamboo shoots. It is also called the giant bamboo shoots. 一道云南人家饭桌上必不可少的菜:酸腌菜炒肉【滇西小哥】

酸腌菜是云南一道土味浓厚的美食,它没有四川泡菜那么火辣,也不像东北泡菜那么清爽,但它独有的酸爽总能牵绊着所有云南人的心!…我们每家都有很多土坛子,专门用来装腌制的各种咸菜,如藠头,竹笋,骨头渣,萝卜干肉等!当然必不可少的还有酸腌菜,我家里每年都会腌上满满的一坛,存着吃上一整年,可以直接吃或者煮饵丝米线时候当成调味料,也可以用来炒肉,炒土豆和藕片,总吃不腻,偶尔出远门也不忘带上一小罐。

寻找云南香格里拉高原上的舌尖美味——藏餐【滇西小哥】

说起藏餐, 怎么少得了牦牛肉,酥油茶和糌粑呢?和鲁茸告别后我们去了一趟香格里拉吉迪村的牧场,除了草甸牛羊,这里还有香气扑鼻的糌粑和香甜沁人的酥油茶。
村里的老人们3到9月都在牧场放牧,每天都挤牛奶做酥油,第一次看到酥油的制作过程,也尝到了最新鲜的酥油茶的味道,走之前和爷爷买了一饼酥油和一些牦牛肉,爷爷还送了我青稞粉,回家后做一顿正儿八经的藏餐~除了酥油茶和糌粑,我还做了藏式火锅和耗牛肉干,也很有味道呢!

Speaking of Tibetan dishes, how can we forget yak meat, butter tea and tsampas? After saying goodbye to Lu, we went to the Jidi Village Pasture of Shangri-La. Besides yaks and goats, this place is also famous for its fragrance tsampa and delicious butter tea.
Between March to September, the elders usually herd the cattle in the pasture. They will collect milk and make butter daily. It's my first time seeing how the butter is made. I also had a try at the freshest butter tea. I bought a butter cake and some yak before leaving. The old man also gave me some hulless barley powder as a gift. I made some real Tibetan dishes at home. Besides butter tea and tsampa, I also made a Tibetan yak hot pot and some dried yak meat. It's very delicious.

In almost every market of Yunnan, you will find some plain looking steamed buns. They look somewhat cluttered and messy and are called crispy stuffed buns. It is one of the traditional Dian pastries with crispy wrappers and savory pork stuffings.

藕粉———盛夏荷塘里的营养美味【滇西小哥】

莲藕的成熟季节大多在8月份,云南的第一批藕已经成熟啦,云贵高原充足的日照环境下种出来的藕,脆脆甜甜的,去田里挖了几个回来,搞几道当地的小菜尝个鲜,仿佛吃到了夏天阳光的味道!

Lotus roots usually harvest in August. However in Yunnan, the first lotus roots can be harvested already. They are crispy and sweet. So I made several local dishes with them. Thanks to the great natural environment of Yunnan, you can taste the summer sunshine even in the lotus roots.

Eating raw fruits is a common practice in Yunnan, one of which is eating the raw mangoes! Raw mango is very sour, crispy and fresh; and we use it mainly for its unique sourness. Besides eating with granulated sugar and hot sauce dressing, it can also be stir-fried with meat or made into cold dish with shrimps. So appetizing!

香茅草是云南一种天然的香料,因有柠檬香味,又叫柠檬香茅,可调味、晒干泡水、入药等,具有健脾清火的功效!
