1. MAKOKO VILLAGE
ADDRESS: Lagos Lagoon, Nigeria

????????PANLA FISH: Wash and scale fish. Stick a piece of wood through the tail and the head of the fish, making a ring. Place them on the fire to smoke for 12 hours. Mix baking flour, yeast, a little water, salt into a ball and fry

????????ONUTCHONU: In a pot, boil cooking oil with white onion, salsa (mixture of tomato, red chili pepper and red onion) and allow to boil. Add salt and fish and mix.

????????OWE FUFLU: In a pot, add palm oil. Add red onions, a spoonful of the blend of chili pepper, tomato and onions and stir. Add crayfish seasoning (red cube, crushed), salt, dried fish and stir.

????????GALIDODO: Add cooking oil, onion and blend of chili pepper, red onion and tomato. Add more onion, water, dried fish, cassava flakes and mix. Add more cooking oil and mix until finished.

» THE MALAGASY SEAFOOD

1. MANAKARA FISHING VILLAGE: Seafood Feast
ADDRESS: Manakara, Madagascar

????CASSAVA: Boil cassava in water for 30 minutes. Once soft, mash the cassava, mixing in crushed peanuts until the texture is similar to mashed potatoes.

????BREADFRUIT: Boil the breadfruit until soft, then add a bit of salt and mash.

????SHRIMP: Sauté shrimp with onion and tomato. Add cassava leaves on top and allow it to boil in water to create a shrimp soup.

????TUNA: Cut the tuna into sections and put it in a hot steel pot. Add in fried onion, tomato and salt and allow it to steam until cooked through.

????(What the heck? Where’s the lobster emoji?) LOBSTER: Cut the lobster down the center and grill to perfection!

1. OBALENDE
ADDRESS: Obalende, Lagos, Nigeria

????????PUFF PUFF: Mix baking flour, yeast, a little water, salt into a ball and fry

????????KOKO: Begin with congealed solid millet. In a pot, add the millet and water to liquify it into a paste. In a separate big pot, boil water and pour the mixture of the liquified millet into boiling water and continuously stir it using a big wooden spoon until it thickens.

????????ABACHA (African Salad): Mix garden egg leaf, cassava shavings, fermented ugba (oil bean), fresh pepper, onions, garden egg, ugwun sauce, roasted fish and cow skin together in a bowl and plate in a styrofoam plate. Top with roasted fish and cow skin (ponmo), which has been marinated in fresh pepper sauce.

????????TUWO AND GBEGIRI SOUP: Mix grounded corn flour in boiled water. Pour some of the liquid out. After cooking, add more grounded corn flour (dried) and beat it. Pour it back in and continue mixing

????????BOLI AND GROUNDNUT: Peel and grill the plantain. Dip it into the groundnut and enjoy

VILLAGE LIFE IN NIGERIA

1. FAMILY HOUSE

???????? AKARA (Bean Cakes): Wash, peel and grind beans. Grind red chili pepper and onion, then mix all together with the ground beans in a bowl. Create circle bean cakes and fry in oil.

???? PAP: Add soaked ground corn mixture to boiling hot water and mix until it becomes a thick consistency.

????GOAT PEPPER SOUP: Boil goat meat | Soup: Boil water and add plantain, add ground red chili pepper and onion mixture. Add lemongrass and local seasoning and allow it to boil. Add boiled goat meat and salt. Add chicken seasoning and then serve when ready.

????????ỌBẸ AND AGAGE BREAD: Beans: Pick the beans and separate them from the shaft. Pour beans into boiling water, add salt and onions. Allow beans to cook for about 30 minutes. | Meat Stew: In a pot, heat up a mixture of palm oil and groundnut oil. Add a mixture of red onion, red pepper, and tomato. Add salt and minced chicken. Cook for 20 minutes. | To Serve: Add the stew and beans into a bowl and serve with Agage Bread

???????? GRASSCUTTER: In a very large cooking vessel, add chopped grasscutter, chopped red onion, chicken seasoning, salt, scent leaf and mix. Add more chicken seasoning and black pepper and continue stirring. Allow it to cook for about 15 minutes. Separately, blend red onion, tomatoes and red chili peppers. In a new cooking vessel, add oil then add the partially cooked grasscutter meat to lightly fry it. In a third cooking vessel, add oil and pour in the blended mixture of red onion, tomato and red chili pepper. Stir it around and add chopped red onion, salt, black pepper and scent leaves. Add the grasscutter. Continue stirring until it is ready.

TRADITIONAL + EXPENSIVE FOOD

ADDRESS: 9 Chapel St, Yaba 100001, Lagos, Nigeria

???????? JOLLOF RICE: Mix vegetable oil, seasoning, tomato paste, onion, salt, red chili pepper and water. Add Niger sweet rice (locally grown rice) and allow it to cook and absorb the sauce for 40 minutes.

???????? POUNDED YAM: Peel yams and chop into cubes. Mix yams with very very hot water and pound with a big wooden paddle until it is soft/sticky.

???????? BOILED COW SKIN: Boil cow skin in water, add salt.

???????? AMALA: Dry out yam flour. In a massive pot, boil water. Add yam flour and mix until it turns black. Pour it into a new bucket and continue beating it. Serve with stew and other foods.

???????? GOAT MEAT: Chop up goat meat. In a massive pot, boil water. Add goat meat. In a big cooking pan, Add palm oil and onion. Then add Tomato, red chili pepper, onion, red chili blended together - boil separately - add chicken powder and salt THEN mix in the goat meat.

3. ILE EROS
SOCIAL MEDIA: Chef Eros - @thebillionairechef | Ile Eros - @ile.eros

???????? RICE DISH: In a frying pan, add coconut sauced cream, sauteed corn and ofada rice. Mix. Add coconut sauced cream and stir.

???????? MASA: Cut Masa (rice cakes) in half, place suya pepper on top. In a frying pan, add butter. Place the masa face down in the frying pan and let it cook for a minute and then plate.

???????? ANTELOPE DISH: In a frying pan, add butter and garlic cloves. Add antelope, parsley and more butter. Allow to cook, mixing the butter and sauce over the antelope Place masa and salad on top. Sprinkle suya pepper.

???????? GUINEA FOWL: Boil water and dip the guinea fowl in the water. Defeather, debone and butcher the guinea fowl. Slice into thin pieces and lay in a pan. Add salt, pepper and flip. Sear it in a frying pan with butter. Marinate it in a homemade palm oil habanero pepper sauce for about 3 hours. In a separate frying pan, add oil. Make a meatball out of the offbits of the guinea fowl that aren’t typically used. Fry. Mix in fried cassava flakes (garig).

» KILIFI SWAHILI VILLAGE

1. Giriama Homestead: Cassava + Kinolo + Turkey + Ugali

Our food journey through Kenya brought us to the Giriama Homestead in Kilifi. The Giriama is a bantu Kenyan community known to be one of the nine ethnic groups that inhabit the Kenyan coast, just about 2 hours away from Mombasa. The Giriama tribe largely depend on agriculture and hunting for food. They showed us how they grow their food and also shared some traditional tribal dishes with us.

???????? CASSAVA: Boil cassava then mix with freshly grated coconut milk. Mash cassava leaves in a mortar and then cook.

???? KINOLO: Mash ripe bananas in a traditional giant mortar. Mix in maize flour then bake in a jiko. Serve on banana leaves.

???? TURKEY: Clean turkey and stew in a large pot with water and salt. Season to taste.

???????? UGALI: Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

????????GUMBO: Saute flour and oil in a pot. Add onions, bell peppers and celery and saute until softened. Add chicken or seafood stock to the pot. Add the meat, gulf seafood & vegetables and 3-4 bay leaves. Cook for 30 minutes. Remove bay leaves before serving.

????EGGPLANT NAPOLEON: Coat eggplant slices with italian bread crumbs and fry. Coat gulf shrimp with flour and fry. To make crawfish cream sauce, simmer garlic, add cream, creole seasoning, worcestershire, butter and green onion. Combine and serve.

????RED BEANS & RICE: Boil soaked beans in water or stock. Add onions, bell peppers, celery, and sausage. Add thyme and bay leaves. Bring to a simmer for about 2 hours until beans are soft. Continue to add liquid and stir until the mixture becomes creamy. Serve with Louisiana long grain or popcorn rice.

????CRAB & CORN BEIGNET BALLS: Mix together plain flour, cornmeal and baking powder. Add eggs and milk to form a batter. Add crab meat, kernels from the cooked corn on the cob and red peppers chopped finely. In a bowl, mix together herbs, lemon and cayenne and mayonnaise. Form little balls from the batter and deep fry until golden brown. Serve alongside the mayonnaise mixture.

» THE EXOTIC FOODS

1. TALAD KAO MARKET: Mrs. Pan’s Bug Cart

????The night before Mrs. Pan cooks the bugs she will later sell in the market, her son goes to Khlong Toei, Bangkok’s largest wet market, to purchase a variety of insects. She begins cooking each morning in order to make it to the market and set up her cart by 2pm. To cook the bugs, Mrs. Pan first adds oil and chopped pandan leaves to a frying pan. The pandan leaves add a nice fragrance to the bugs while cutting the bitter taste. She adds her first round of bugs and allows them to fry for roughly 30 minutes. She allows the crickets to cook for only 15 minutes. To enhance the flavors, she does not clean the pan between bugs. Then she’s off to the market, to fill hungry bellies with bugs!

2. TOY KUAY TEOW: Boat Noodles (Blood Noodle Soup)

????Toy Kuay Teow has been serving up boat noodles for 50 years and is on its third generation. To make one of Bangkok’s most beloved noodle soups, combine chilli dressing, pork, meatballs, vermicelli noodles, pork blood, pork soup, scallions and herbs, bok choy, fried pork skin and fried flat noodles (optional). Beef boat noodles include beef blood, rather than pork blood.

3. J'KHAI SEAFOOD: Horseshoe Crab Eggs
ADDRESS: 1300/3-4 Prachachuen Road, Bangsue Bangkok
OPEN: 3PM - 12AM

J’Khai Seafood started when the owner began selling food from a small cart 34 years ago. It is now a multi-story restaurant in Bangkok, and their signature “Thai curry steamed horseshoe crab eggs” recently won Wongnai Users’ Choice for best dish.

????To make this tasty meal, they first steam the horseshoe crab, cutting open the lower part of the crab to remove all of the eggs. Separately, create the seasoning, mixing Thai red curry paste, sugar, MSG, oyster sauce and carnation milk. Add the seasoning to an oiled, heated pan before adding chicken egg and finger root. Allow to stir-fry for a bit, then scoop everything back into the horseshoe crab shell. Take the horseshoe crab and grill it over hot charcoal until bubbling. Top it off with coconut milk, sliced lime leaves and carrots before diving in.

????ROASTED OSTRICH: Defeather and clean the ostrich. Place in a large container with a mixture of red wine, water, salt, pepper, garlic and sugar and let it marinate for 26 hours. Cut off it’s neck and wings and put aside. Rub and stuff the bird with garlic, herbs, basil, thyme, oregano and a secret Quan Ut Ut ingredient. Put the bird in the BBQ pit and smoke for 2 hours with jackfruit wood. After, pour more wine inside the tray with the ostrich and add onions, carrots, water, BBQ power and thyme. Finally, put a towel on the ostrich and cover it with foil. Place in the BBQ pit for 16 hours at 105C degrees. Take the cooked bird out and hand shred the meat for serving. Serve 200grams of shredded meat on a platter with house cornbread, pink coleslaw and mashed potatoes with the au jus gravy.

????AU JUS GRAVY: Separate the fat from the Ostrich juices by putting the liquid in the fridge to cool and then skimming the fat layer, leaving the collagen and broth. Make a roux by adding oil to a pot and sautéing onions and flour together. Add the ostrich broth and mix slowly. Add flour until the mixture becomes thick.

????GIANT DEVILED EGGS: Boil the giant egg in 1.5 hours, then take it out of the pot and let it cool in a bowl of cold water for 15 mins. Remove the egg shell and cut it into two. Scoop out the yolk and put it in a bowl with pepper, cayenne, salt, paprika, and minced pickles (cucumber and jalapeno), mayo and bacon. Put the filling in a plastic bag and squeeze it in the egg white. Top with bacon and jalapeno.

????GIANT BUFFALO WINGS: Boil wings for 20 min then remove remaining feathers. Place wings in a fryer for 16 - 18mins until golden brown. Place the cooked wings in a big bowl with buffalo sauce. Garnish the wings with coriander and serve with blue cheese.
