???????? AKARA (Bean Cakes): Wash, peel and grind beans. Grind red chili pepper and onion, then mix all together with the ground beans in a bowl. Create circle bean cakes and fry in oil.

???? PAP: Add soaked ground corn mixture to boiling hot water and mix until it becomes a thick consistency.

????GOAT PEPPER SOUP: Boil goat meat | Soup: Boil water and add plantain, add ground red chili pepper and onion mixture. Add lemongrass and local seasoning and allow it to boil. Add boiled goat meat and salt. Add chicken seasoning and then serve when ready.

????????ỌBẸ AND AGAGE BREAD: Beans: Pick the beans and separate them from the shaft. Pour beans into boiling water, add salt and onions. Allow beans to cook for about 30 minutes. | Meat Stew: In a pot, heat up a mixture of palm oil and groundnut oil. Add a mixture of red onion, red pepper, and tomato. Add salt and minced chicken. Cook for 20 minutes. | To Serve: Add the stew and beans into a bowl and serve with Agage Bread

???????? GRASSCUTTER: In a very large cooking vessel, add chopped grasscutter, chopped red onion, chicken seasoning, salt, scent leaf and mix. Add more chicken seasoning and black pepper and continue stirring. Allow it to cook for about 15 minutes. Separately, blend red onion, tomatoes and red chili peppers. In a new cooking vessel, add oil then add the partially cooked grasscutter meat to lightly fry it. In a third cooking vessel, add oil and pour in the blended mixture of red onion, tomato and red chili pepper. Stir it around and add chopped red onion, salt, black pepper and scent leaves. Add the grasscutter. Continue stirring until it is ready.

1. MAKOKO VILLAGE
ADDRESS: Lagos Lagoon, Nigeria

????????PANLA FISH: Wash and scale fish. Stick a piece of wood through the tail and the head of the fish, making a ring. Place them on the fire to smoke for 12 hours. Mix baking flour, yeast, a little water, salt into a ball and fry

????????ONUTCHONU: In a pot, boil cooking oil with white onion, salsa (mixture of tomato, red chili pepper and red onion) and allow to boil. Add salt and fish and mix.

????????OWE FUFLU: In a pot, add palm oil. Add red onions, a spoonful of the blend of chili pepper, tomato and onions and stir. Add crayfish seasoning (red cube, crushed), salt, dried fish and stir.

????????GALIDODO: Add cooking oil, onion and blend of chili pepper, red onion and tomato. Add more onion, water, dried fish, cassava flakes and mix. Add more cooking oil and mix until finished.

???????? JOLLOF RICE: Mix vegetable oil, seasoning, tomato paste, onion, salt, red chili pepper and water. Add Niger sweet rice (locally grown rice) and allow it to cook and absorb the sauce for 40 minutes.

???????? POUNDED YAM: Peel yams and chop into cubes. Mix yams with very very hot water and pound with a big wooden paddle until it is soft/sticky.

???????? BOILED COW SKIN: Boil cow skin in water, add salt.

???????? MASA: Cut Masa (rice cakes) in half, place suya pepper on top. In a frying pan, add butter. Place the masa face down in the frying pan and let it cook for a minute and then plate.

???????? ANTELOPE DISH: In a frying pan, add butter and garlic cloves. Add antelope, parsley and more butter. Allow to cook, mixing the butter and sauce over the antelope Place masa and salad on top. Sprinkle suya pepper.

???????? GUINEA FOWL: Boil water and dip the guinea fowl in the water. Defeather, debone and butcher the guinea fowl. Slice into thin pieces and lay in a pan. Add salt, pepper and flip. Sear it in a frying pan with butter. Marinate it in a homemade palm oil habanero pepper sauce for about 3 hours. In a separate frying pan, add oil. Make a meatball out of the offbits of the guinea fowl that aren’t typically used. Fry. Mix in fried cassava flakes (garig).

1. MANAKARA FISHING VILLAGE: Seafood Feast
ADDRESS: Manakara, Madagascar

????CASSAVA: Boil cassava in water for 30 minutes. Once soft, mash the cassava, mixing in crushed peanuts until the texture is similar to mashed potatoes.

????BREADFRUIT: Boil the breadfruit until soft, then add a bit of salt and mash.

????SHRIMP: Sauté shrimp with onion and tomato. Add cassava leaves on top and allow it to boil in water to create a shrimp soup.

????TUNA: Cut the tuna into sections and put it in a hot steel pot. Add in fried onion, tomato and salt and allow it to steam until cooked through.

????????STIR-FRIED CHICKEN BUTTS: Chop up all the veggies and mash the garlic. Prepare a hot pan with cooking oil and add ginger, garlic, chilli, onion, chicken butts, carrot, bell pepper, oyster sauce, soy sauce, chicken powder and salt. Add sweet thick soy sauce and scallion and stir.

????????BOILED BEEF TRIPE AND TONGUE: Marinate beef tongue and tripe with salt, garlic, ginger and rice wine. Boil for 15 mins. Stir-fry the beef tongue for a bit. Serve with the biel sauce (ground coriander, basil, herbs mix with biel juice)

????????GRILLED DOVE AND SPARROW: Marinate the birds with garlic, ginger, paprika and rice wine. Grill for 20 minutes.

» KILIFI SWAHILI VILLAGE

1. Giriama Homestead: Cassava + Kinolo + Turkey + Ugali
ADDRESS: Koleni, Kilifi, Kenyan Coast

Our food journey through Kenya brought us to the Giriama Homestead in Kilifi. The Giriama is a bantu Kenyan community known to be one of the nine ethnic groups that inhabit the Kenyan coast, just about 2 hours away from Mombasa. The Giriama tribe largely depend on agriculture and hunting for food. They showed us how they grow their food and also shared some traditional tribal dishes with us.

???????? CASSAVA: Boil cassava then mix with freshly grated coconut milk. Mash cassava leaves in a mortar and then cook.

???? KINOLO: Mash ripe bananas in a traditional giant mortar. Mix in maize flour then bake in a jiko. Serve on banana leaves.

???? TURKEY: Clean turkey and stew in a large pot with water and salt. Season to taste.

???????? UGALI: Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

9 Things NOT To Do in Nigeria

There are many misconceptions about Nigeria, it's not a poor country, it has a rich culture and cuisine, and not every man there is a prince who wants to give you money. Although Lagos, Abuja, and Calabar seem like well-established tourist locations, there are a few things we should avoid doing when we visit.

1. Don't Flash The Cash.
Most places accept credit cards, so the need for cash is low. Avoid carrying cash if possible and if you have to carry cash, avoid showing it. Keep your wallet and phone in your front pockets and don't wear any expensive jewelry or watches.

2. Don't Make Assumptions.
Although most Nigerians speak English and almost half are Christians you shouldn't assume their culture is the same. Over half of Nigerians are Muslim and the Nigerian culture is an amalgamation of multiple ethnic groups.

3. Don't Forget Your Vaccines!
In addition to your routine vaccines, it is recommended that you get vaccinated for Measles, Yellow fever, Polio, Hepatitis A, Malaria, and Typhoid. It is also a good idea to carry proof of your vaccinations with you as you may be asked for this at the airport.

4. Don't Forget Your Visa.
Unless you are a citizen of a neighboring country, you are going to need a visa to enter Nigeria. Start the process at least a month before your trip because it is quite a lengthy process and requires a lot of paperwork. it is also quite expensive, so be prepared!

5. Don't Be Afraid of The Cuisine!
Nigeria offers all types of international cuisines but their own is delicious (it maybe a bit spicy!) try Bolli which is roasted Plantain Jollof rice and Suya which are spicy kebabs.

6. Don't say you Love Africa!
Nigeria is a country, Africa is a continent. Going to Nigeria and telling a Nigerian you love Africa is like going to Cuba and saying you love North America!

7. Don,t Go Out Alone At Night
Taking walks or going out clubbing alone at night is not recommended. Get a guide or befriend a local, also avoid public transport and book cabs in advance from reputable companies!

8. Don't Forget Your passport
Get photocopies of your passport to carry around with you for identification and only show the original at the airport.

9. Pack Carefully!
Make sure you pack some necessities in your hand luggage, hold luggage can be delayed or even disappear so to avoid spending days in the same clothes, put some in your carry-on bag. Pack a torch and a battery pack too, as power outages are a common occurrence.
