Pan-Seared Salmon with Artichokes and White Wine

Yield: 4 servings

Ingredients

2 tablespoons olive oil
Four 6-ounce center-cut skinless salmon fillets
1 teaspoon kosher salt
2 tablespoons butter
3 sprigs fresh oregano plus 1 tablespoon chopped
One 9-ounce box frozen artichoke hearts, thawed
1 shallot, sliced
3/4 cup chopped oil-packed sun-dried tomatoes
1/2 cup dry white wine
2 cups baby spinach

Directions

In a medium skillet, heat the oil over medium-high heat. Season the salmon fillets evenly with the salt and place each fillet flesh-side down in the hot skillet. Cook until deep golden brown, about 3 minutes. Sear the sides of the fillets for 1 minute on each side. Using a fish spatula, flip the fillets so the skin side is down and cook an additional 2 minutes. Add 1 tablespoon of the butter and the oregano sprigs to the skillet and reduce the heat to medium. Baste the salmon fillets with the infused butter for 1 minute. Remove the salmon and oregano sprigs to a plate to rest.

In the same skillet over medium heat, add the artichoke hearts and shallots. Cook, stirring often with a wooden spoon, until the shallots are softened and the artichokes are beginning to brown, about 4 minutes. Add the chopped oregano and tomatoes and stir to combine. Deglaze the skillet with the white wine and allow the wine to cook down until reduced by half. Stir in the remaining 1 tablespoon butter and the spinach. Cook until the spinach is just barely wilted. Spoon the vegetables onto a platter and top with the rested salmon. Spoon any remaining sauce over the fish and serve.

Giada De Laurentiis' Red Wine Pasta Recipe: Health Benefits of Wine Part II (2018)

Do you love wine? And pasta? Would you love a healthy way to enjoy both of them at the same time? Well in this special DIY Madness segment, I am going to show you how you can do just that! In my previous video on the benefits of wine I promised you I was going to share with you a great recipe I found by the amazing Giada De Laurentiis! I’ve been wanting to try this for a very long time, and I think you’re gonna love it!



INGREDIENTS:
Kosher salt
1 pound spaghetti
1/4 cup extra-virgin olive oil
3 large cloves garlic, chopped
1 large shallot, halved, thinly sliced into strips
1/2 teaspoon dried crushed red pepper
One 750ml bottle zinfandel
1 tablespoon tomato paste
1 tablespoon butter
1/4 cup fresh flat-leaf parsley leaves, chopped
4 ounces coarsely crumbled goat cheese

Bring a large pot of salted water to the boil. Add the pasta and cook for 6 minutes, stirring pasta occasionally, until par-cooked.
Drain and reserve the pasta water.
In a 12-inch skillet, heat the olive oil over medium-high heat.
Add the garlic, shallots, crushed red pepper flakes and 1 tsp. salt.
Cook for about 1 to 2 minutes, or until the garlic starts smelling amazing.
Then add the wine and tomato paste, bringing it to a simmer over medium-high heat.
Once you’ve got it gently bubbling, reduce the heat to medium and let it lightly simmer for 3 minutes.
Add the pasta to the skillet! Stir frequently as you cook, until almost all of the wine is absorbed and the pasta is tender but still on the firm side, should be about 5 minutes.
If the mixture is too dry, start adding some of that pasta cooking water you set aside, no more than 1/4 cup at a time.
Now add the butter and 1 tsp. salt, stirring as you do. Increase the heat to medium, and toss until the wine sauce thickens enough to coat the pasta, about 1 minute.
Toss to blend.

Add the parsley and goat cheese. If you’re not a huge fan of parsley, you can reduce the amount or just plain omit it. Serve and enjoy!

In a pinch? This technique will cool your wine down to drinkable in mere minutes.

Rather than plop ice cubes in your wine glass or subject your friends to a less-than-refreshing pour, use this way technique to chill wine down in minutes. By wrapping a wet towel around the bottle before sticking it in the freezer, you draw cold to the glass and hold it there, where you need it. This method will get you to perfectly chilled wine in just 10 minutes, so go ahead and invite friends over for that backyard BBQ, knowing you'll be ready to keep the wine flowing!

Buying wine for a crowd can be daunting - any mix of people will have some who self-admittedly know nothing about wine, all the way to aficionados and borderline sommeliers. You don't need to spend tons of money on wine to impress - Giada has two favorites, a red and a white, that will please the crowd without braking the bank.

Giada has already professed her love for Kim Crawford's Savignon Blanc here at Giadzy, and with good reason! This inexpensive white wine is light, buttery, and pairs with a wide variety of dishes.

Quickest Cheese Platter Ever | Giada De Laurentiis

While picking up a jar of pre-made pasta sauce is a-OK in my book, I find it's often easier (and a whole lot cheaper!) to whip up a quick pasta sauce at home instead. If you have pasta water, cheese and butter, you have everything you need for a delicious, cheesy sauce. Use this recipe as a base and add whatever ingredients you have on hand to make the dish your own — frozen peas, pancetta, leftover veggies, you name it!
