1 egg (全蛋)
60g (2 oz) melted butter (溶化牛油)
100ml milk (牛奶)
60g (1/2 cup) plain flour(普通面粉)
20g ( 1 1/2 tbsp) corn flour / corn starch (玉米粉)

5 egg whites (蛋白)
1/4 tsp salt(盐)
90g (1/3 cup + 1 tbsp) caster sugar (细砂糖)

Ingredients:
90 grams cake flour (1/2 cup +3tbsp + 1/2 tsp)
75 ml vegetable oil
60 ml whole milk
6 large egg yolks
6 large egg whites
73 grams sugar (1/3 cup + 3 tsp)
¼ teaspoon salt

This is an improved version of my previous cotton cake recipe, enjoy!

Recipe for 8 inch square/ round pan:

7 Egg yolk + 1 whole egg
Milk: 100g/ [1/3 cup + 1 and 1/2 tbsp]
Flour: 100g [3/4 cup]
Butter: 80g [1/4 cup + 2 tbsp]
7 Egg white
Sugar: 100g [1/2 cup]

White vinegar/Lemon juice/ Cream of tartar 1/4 tsp

???? Pan size: 7x7 inches
Ingredients
70g Butter (unsalted)
70g Milk
6 Eggs (room temperature)
1/4 tsp Salt
1/2 tsp Vanilla extract
90g Cake flour
70g Sugar

Direction
In a small bowl put butter and milk and place it a big bowl of boiled water to melt
Separate the egg yolk from the white and add vanilla extract and salt into the yolk then mix it
Add melted butter mixture into the egg yolk and mix it well
Sift cake flour and mix it without any lumps
Start the meringue with egg white
Add sugar in 3 times from the beginning to make a fine foam meringue
Make the meringue soft peak
Add a little amount of meringue into the batter and mix it gently with a whisk
Pour the batter into the meringue and mix it well
Pour the batter into the prepared cake pan and release the big bubbles
Place the cake pan onto a larger pan. Pour hot water(176F) up to 1 inch high
Bake it at 300F for 1 hour
Remove from the oven and cool down

材料
芥花油:40g
低筯麵粉:65g
牛奶:65g
全蛋:1顆
蛋黃:5顆
蛋白:5顆
鹽:1小撮
糖:65g

作法:
烤模尺寸 : 約140×170×高50mm
1. 烤箱先以170oc/170oc預熱
2. 芥花油加熱到120度C
3. 低筯麵粉過篩加入熱油中
4. 牛奶分4次加入麵糊中,每次都要拌至牛奶被麵糊吸收後再倒入下一次的份量
5. 蛋黃分2次加入麵糊中,每次都要被麵糊吸收後再倒入下一次的份量
5. 全蛋:1顆加入麵糊拌勻後 備用
6.蛋白中加入鹽,先打發至粗泡泡,加入第一次的糖
7.繼續打發至蛋白泡沫細緻,加入第二次的糖
8.此時蛋白泡沫更為細緻,但還有一些流動性,加入第三次糖
9.繼續打發至蛋白有結實感,器具倒置也不會流出
10.取1/4打發蛋白至蛋黃麵糊中,拌勻,再將剩餘的蛋白全部倒入,輕輕拌合
12.外盒倒入冷水,進行冷水浴烤法

170oc/170oc 10分
150 oc/150oc 40分
150 oc/100oc 20分
0 oc/0oc 15分
