Thai Red Curry with Prawns | Jamie Oliver

This beautifully fragrant and colourful recipe is super quick and tasty. Kaffir lime leaves and lemongrass is blitzed with garlic, ginger and roasted peppers for a smoky/sweet curry paste. Toss in the prawns and sugar snap peas and add coconut milk for extra creaminess. Serve with fluffy rice for a satisfying and deliciously moreish meal.

Mussels are going to get some Thai Treatment with in this delicious recipe of Thai Green Curry Mussels. These shells are going to cook up in a delicious Thai Green Paste and they will open up with the heat and inherit those unique Thai flavors!

Here are the ingredients and steps to make this recipe!

THAI GREEN CURRY Mussels

Ingredients

2 lbs cleaned Mussels
½ cup sliced Shallots
3-4 Thai Red Chillies
4 tbsps Green Curry Paste
1 tbsp Fish sauce
200 ml Coconut milk
½ cup Thai Basil leaves

Instructions

Saute the Shallots & red Chillies
Add the Thai Green Curry paste and saute
Add the fish sauce
Add the Mussels and stir to coat
The Mussels will start to open up
Cook for 10 - 15 mins
Add Coconut Milk & more fish sauce if required
Add Thai Basil leaves

The freshness of a Thai Green Curry paste really sing together with creamy coconut milk in this recipe. When I want to learn how to make an authentic Thai dish, I always rely on the experts – I have been a subscriber of fellow Canadian Pailin’s Hot Thai Kitchen for a long time and I appreciate her very informative and straightforward approach to Thai food. I’m going to show you my version of her recipe for Thai Green Curry Chicken. This recipe is very popular globally for many reasons, the combination of a fragrant Thai green Curry paste fused with coconut milk, Chicken and other aromatics is simply out of this world.

Ingredients
1 tsp Coconut oil
2 cups coconut milk(400 ml can)
3 Red chillies sliced
4 tsps Thai Green Curry paste
2 tbsps Fish sauce
1 tbsp Palm Sugar(can sub light brown Sugar)
3-4 Lime leaves
1 lb boneless Chicken cubes
1 cup Chicken stock
Fresh Basil leaves
2 small Thai eggplant cut in slices (can sub regular eggplant)
1/4 cup canned and drained Bamboo strips

Process

Heat the Coconut oil in a wok add the red chillies and lightly brown the Chicken and keep aside. Note: Chicken is not typically sautéed in Thai cuisine – you can skip this step and cook the Chicken later

Add 1 cup of the heavies part of the Coconut milk to the hot wok and cook down till oil starts to separate or the milk reduces by half

Add the curry paste and mix in

Add the Fish sauce and Palm Sugar

Add the Lime leaves

Add another cup of Coconut milk and a cup of Chicken stock and bring to the boil

Add the sauteed Chicken back in and cook for about 5 – 7 mins. If skipping the sauteing step, cook the chicken for at least 7 – 15 mins

Add the Thai eggplant slices and allow to cook for a minute before adding the Bamboo strips and Thai Basil leaves

Serve with Jasmine rice

Quick and Easy Thai Green Curry is a simplified version of the Thai classic that can be made in around 20 minutes. A rich creamy sauce is combined with a mixture of fresh vegetables and your choice of meat, then stir fried until fragrant and ready to eat! Quick enough to make on weeknights and easy enough to make on a regular basis, this dish will save you having to order take out - give it a go!

270ml Can of Coconut Milk
500g of Pork Strips (or chicken, fish or prawns/shrimp)

(I used carrot, red capsicum / bell pepper, baby corn and green beans)
2 Teaspoons of Brown Sugar
2 Teaspoons of Fish Sauce
Boiled Rice or Noodles (to serve - optional)

Preparation Time: About 10 minutes
Cooking Time: About 20 minutes

SERVES 4

Thai Green Curry Paste

In this recipe whole spices like white pepper, cumin and coriander are lightly roasted and combined with aromatics like Galangal(from the Ginger family), Lemongrass, Chillies, Garlic and Shallots. I also cram in Coriander stems that are so unique, with Kaffir lime peel, some shrimp paste, fish sauce and salt. I like my Thai Green Curry paste to take on a beautiful natural green colour so I add in some Coriander and Basil leaves as well. Once ground, this is the most aromatic paste you have ever experienced. The freshness of the ingredients really stand out. This must be bottled and refrigerated and is good for a few days or can be frozen for use later.

Ingredients

1 tsp each White Pepper, Cumin seeds, Coriander seeds – roasted and ground

2 Shallots sliced

4 cloves of garlic roughly chopped

20 smal Thai green chillies

1 thumb size piece of Galangal – 2 tbsps

1 stick of lemongrass – 4 tbsps

Peel of a Kafir lime – 1 tbsp

Coriander root – 6 tbsps

1 tsp Shrimp paste

3 tbsps Fish sauce

Salt

1/2 cup fresh Coriander leaves

1/4 cup Basil leaves


Process


Grind everything except the leaves to a fine paste, adding water only if required


Add the Coriander and Basil leaves and continue to grind to a fine paste

Thai Green Curry Chicken (Easy Recipe)

Thai green curry is the most famous Thai dish outside Thailand. It has a distinct green color that set it apart from Indian, Malaysian, and Japanese curries which are mostly red or yellow. The green color is from the green chilies instead of red chilies used in other types of curry.

I want to share with you how to prepare this curry dish in this video. Please watch the video and then refer to the step-by-step guide below:

Ingredients:

70 g Thai green curry paste (store-bought)
500 g chicken breast meat (or chicken thigh)
375 ml (1.5cups) of coconut milk
8 sprigs Thai basil leaf (use the leaf only)
125ml (half cup) chicken stock
70 g eggplants
70 g king oyster mushroom
4 pieces kaffir lime leaves
30 g palm sugar
2 tbsp fish sauce
1 red spur chilies

Method:

1. Cut the chicken meat into 1cm to 1.5 cm cubes.
2. Cut the eggplant to the same size of the chicken pieces.
3. Shred the king oyster mushroom into small pieces.
4. Place half of the coconut milk into a pot. Heat it gently until it starts to boil. Reduce it to a thick sauce.
5. Add the green curry paste. Saute until it turns aromatic.
6. Blend 2 sprigs of basil leaves with the remaining coconut milk. (To boost the green color). Add to the curry paste in the pot.
7. Add the chicken and chicken stock and cook for 10 minutes.
8. Add the eggplant, mushroom, kaffir lime leaves, palm sugar, and fish sauce. Cook until the eggplant turns soft.
9. Stir in the chopped red chilies and the remaining basil leaves. Let it boil for half a minute. Serve.
